- In this episode, we prepare a rice pudding in the field. The recipe comes from the Military Handbook & Soldiers Manual of Information published in 1861. This is a great way to liven up the simple rice ration and even make a dessert in the field. Thank you to the Waterloo Area Historical Society for hosting us for this episode at the Waterloo Farm Museum.

So this is the Civil War version of Ranger Pudding. Amazing what soldiers do to make their life a little more tolerable.
And amazing how some things just don’t change.
We also found that adding a couple slices of onion while the rice was boiling was a nice addition since we didn't have lemon.

As a meal alone, I’d say 2-4. Served with a meat like boiled pork, maybe 8. Just working off the pre-cooked weight of 1 lb of rice. Will
Who made your forage cap and what style is it? I have an LJ I Phillips from Sekela but I don’t love it just got a good deal on it. To me the brim seems to small. Thank you
