I found some sowbelly in a dumpster one time. It made my day. 😻 I wasn't wearing my uniform at the moment. I hitchhiked all way round the Big I of Hawaii wearing my rebel uniform.
This was so much fun! I admire how Gary and Sarah were able to cook, while also giving us great information. I’m so glad that Gary put his civil war hat on!!! And the dishes both looked great!

Great cook everyone! Garry do not fret, Garbage Plate is indeed a great compliment to the Upstate New Yorkers. As a chef, I particularly enjoyed the historical accuracy aspect both Sarah and Garry incorporated into their dishes. That is something I try to do with my menus as well. It was nice to see you all having fun and it was nice to see Andy. Thank you for sharing and Happy Holidays to you all.
Great video and so fun to watch! I got a question and apologies if it has already been asked; but did the soldiers in the Civil War have access to spices like salt, pepper or parsley to spice up their food? Thank you so much for the education and inspiration.
SO I have always understood the hardback was also soaked in the coffee was not just to soften it but to get the weevils out if. They would float to the top of the coffee and could be scooped out.
Vegan sausage in a Civil War cooking challenge? Not authentic, however I'd take Garry's dish minus the fake susauge and add Sarah's salt pork for the win.
Wow. A witty double shot. One political and the other at NYC. Harkens me to all the shots taken at Lincoln and the Army of The Potomac. When the unpleasantness ended, we were able to see who was left standing. Even with the terrible price paid. Go ahead and take your shots. We have been through a lot worse.
Total malarkey. First- northern troops had sugar quite a bit. Second- if the troops weren’t munching on hardtack as they marched- hardtack was usually broken up/ ground up with the butts of their rifles and the ground hardtack was mixed into whatever they were eating. FactCheckThat

I would give both dishes a try, but I think I would go back for seconds with Sarah's dish. Round two needs to be cooking a meal over a campfire.
