One Pot Taco Rice Bake

It was just one of those days. The kind where time gets away from you and you've got nothing planned for dinner! So, I rummaged through the pantry, cabinets, freezer, and fresh produce coming out of the garden to toss together a one pot meal. This one pot taco rice bake is a tasty and hearty meal that requires minimal dishes and cleanup. That's a winner in my book!

I made something very similar tonight. I had some defrosted sausage so I cooked it up with some veggies (and peppers from the garden!) and added rice. I cook the rice in the same pot, as well. I used a lot of Middle Eastern spices like sumac, cardamom, and za'atar. I love one-pot meals!! Other easy go-to's for us are tacos and stir-frys.
