Its because its something unexpected in their personal space. Doesn't matter if its a cucumber or a potato. They'd still jump if they just happen to see it.

Scare a dog and see if it doesn't try and either run or attack you. Same with humans, to a lesser degree. Being scared releases adrenaline, which prepares our muscles to fight or run.
