***** You could certainly color the petals before assembling. I prefer to do it after, so I don't have to handle each individual petal again, and so I can see better what the finished piece will look like all together. Whatever you feel more comfortable with!

Arlean Stamps Thank you! I'd love to see a picture, if you make a sunflower :) I make my own gumpaste... I use Nicholas Lodge's recipe and it is really amazing to work with. It's also fairly cheap and easy to make. I've tried many premade brands, Satin Ice is a very good one... I also liked James Rosselle's brand. However, I prefer the homemade recipe! It keeps very well in the fridge or freezer :)

Hi Renee, Love your work, and this tutorial. Do you think there is a way you could add a wire to this sunflower to secure it to the cake better? I've been trying to figure it out,but with such a solid flat base, I'm unsure. Thank you for your help!
Nicole Ellis Yes! What I did to attach it to the cake pictured in the video- make the sunflower, and allow to dry, separately, make a ball of gumpaste (about 1/3 the size of the sunflower center) and insert a thick wire (say 2 or 3 20 gauge wires taped together) with a hook. Flatten one side of the ball (so it will rest flat against the flower center) and allow this to dry. When both pieces are dry attach the wire/ball with chocolate and let that harden- should keep everything nice and secure. If you don't want to use chocolate you could use some thick royal icing. I hope that is clear and doesn't sound too complicated. It's easy, just need to do it in 2 pieces (or at least that is the best way I found!). Good luck!

+hadas ainbinder Hi! Sugar Flowers store nearly indefinitely. Just keep them way from humidity and away from light (so the colors don't fade). So you can start as far ahead as you'd like. I typically store them in an airtight container on my cake shelf, which is away from direct sunlight. You can purchase supplies from Amazon or, I buy a lot of my supplies from globalsugarart.com :)

Fondant does not get as hard when dried and generally meant as a cake covering and simple decorations, it doesn't hold it's shape well without additives. Gumpaste dries rock hard and holds it's shape extremely well. Generally people would not eat gumpaste decorations (they could as long as they don't have wires or non-edible items with them). But gumpaste is most often used for flowers or decorations that need to retain a precise shape. Some people will mix Tylose Powder into Fondant to stiffen it or make a type of gumpaste (it will cause the fondant to dry harder as well). Or some people mix 50/50 fondant/gumpaste.

You can definitely make it with fondant. It will dry very hard. But, fondant is a little more floppy than gumpaste when you're shaping and drying.

I believe it was 15 for each layer, so 15 of the smaller size and 30 for the larger size.
