There is no shortcut for inserting long arrows. However you can anytime go to Insert tab->Symbols-.> Liness and then select arrows. Pressing shift while drawing arrows will guide you in making horizontal/vertical arrows.

To answer your another question, how to write above and below just use \above() and \below() to type above and below and include the text that you want to include above/below inside brackets like if you want to type Temperature above arrow then use \above(Temperature). To make this work properly please make sure that it works properly, \above (\below) should immediately follow any text/symbol (no spaces) above/below which you want to type. Please feel free to reply if it is not clear. You can see 10:40 of this video for above and 11:32 of this video for below and 11:57 when you need to type both above and below.

Automatic stretching of arrows are only available for certain arrows like rightarrow. It doesn't work for equilibrium arrow.

Which MS version has " ink equation" option . I am using ms version of 2007, there is no option of ink equation in 2007 version
