I would love for The Simpsons to roast Jackass one of these days. Jackass is a show about guys that do a whole bunch of stunts and pranks that should never be attempted anywhere

Even though Itchy and scratchy are parodies of Tom and Jerry, there’s a early 80s Italian cartoon called Squeak the Mouse by Masimo Matioli that is a dead ringer to I and S and I’ll bet that the creators used that version. Even the character design is spot on.
Have the Simpsons ever satirized Power Rangers at one point? If so, then they should. The plot of the episode would be Mr. Burns unleashing a monster he created from the Nuclear Power Plant's radioactive to terrorize Springfield, and the Simpsons had to pilot a giant robot created by Professor Frink and the Comic Book Guy to stop it, satirizing Power Rangers' "Monster-Of-The-Week" formula. Heck, Jason David Frank (aka Tommy Oliver) could have an appearance in the episode. XD
There were a couple of times that they took a swipe at 20th century DOCTOR WHO: in the episode where Sideshow Bob forces TV to end, Mayor Quimby says "Bring forth the representatives of television!" and in addition to Krusty, Urkel from FAMILY MATTERS, Bumblebee Man and Tom Baker's Doctor appear. Also, Baker shows up at Springfield's periodic SF con...
Don't forget they did parodies of Hanna Barbera characters The Flintstones,Yogi Bear and Scooby Doo but The Flinstones have an cameo in one of episodes.
I have watched "Behind the Laughter" so many times, it's ingrained in my brain. Behind the Music was my favorite show. I'm glad the Simpsons lampooned it.
The Cops parody, Bad Cops, is funny too imho, particularly the part where Chief Wiggum and co are shooting at a walking mummy while the theme song of the parody is playing.

kind of weird that you used a clip of I and S based on them "roasting" the adult cartoon Fritz the Cat when claiming it roasts Tom and Jerry (which it loosely does most of the time). I always though Poochie was a direct response to execs telling The Simpsons producers they needed to introduce a new family member to improve the show rather than a generalisation of the "Jumping The Shark" theory, which I think is reference less subtly in a later episode?
I've seen those that mocked The Batman show obviously I know Itchy and Scratchy mocks Tom and Jerry. Seen ones where they mocked Married With Children Star Trek, Episode where they go to Japan and The Springfield Files.
