K cups are insanely efficient for van life. No clean up, no extra time, no extra waste of water (weight) cleaning reusable KKup thingys, no coffee filters being tossed into landfills, just the pods , and the machines themselves don't really use much energy per cup to brew. compared to pour over types where if you use a gas burner 40% of the heat is lost to the air, or brewing too much coffee (Mr coffee style) that you just toss out once it goes stale or gets cold. K Kups all the way.
Fantastic. I have my kitchen setup similar to yours. Microwave, Same Keurig, Induction Cooker and Air Fryer, runs off my Eco Flow Delta 2 max. I usualy turn the coffee maker upside down for a little bit in the colder months to make sure there's no water in the lines that can freeze during winter. Unfortunately I haven't been able to make any RUclips videos the last 4 months due to a plethora of issues with the Suburban, new engine and stuff. Hope to be YouTubing again soon, thanks for sharing your tips.
Sounds like a great setup, glad to hear you’re working on getting back on the road soon. I haven’t had any issues with the coffee maker in the cold, but now it is something to consider as the temps get colder.
If you don't brew K cups often , that particular design of Keurig works great , dump some water in it just for that particular brewing session and you don't have to worry about having 20 oz of water left over sloshing around as you drive like the bigger K kup machines , plus it doesn't take up a huge amount of space.

@jeanwest1058 hi, I added those brackets recently to see if they’d hold the bed in place on the frame. My only concern with them is that they could be uncomfortable in certain places where you might put a knee or elbow. Here’s the link: amzn.to/3DK7bZW and there are several other options.
How come people don't use the short extension cord power bars? Where you can use a button to shut the power down? I realize that they still draw power. But I have them in my trailer for shore power. They come in many shorter lengths.

I will never understand why people build beds when you can clearly use the lighter metal version that you show here. Makes it easier
More comfort. Metal is hard.
People may want different heights, different widths, different set up, different storage capacity...lots of reasons.
Different strokes for different folks! Choices are unlimited when you can build yourself. 😉
I use a foldable cot in the van!
I mean you can choose to just lay down on the floor with a good mat and sleeping bag. Still better than a tent.

A minivan seems to be the perfect platform for car camping.
It is. I’ve tried the Jeep and an SUV. This is the best so far.
I chose to go with the 2013 Toyota Sienna. Because it's what I had.
