  • Welcome to my kitchen! Today, I’m sharing with you a delightful recipe for a light and fluffy Chocolate Sponge Cake. This recipe is perfect for any occasion, combining rich cocoa flavor with a creamy icing that’s sure to impress. Whether you’re an experienced baker or just starting out, this cake is both easy to make and absolutely delicious.
    Ingredients:
    6 egg whites
    Pinch of salt
    200g sugar (1 cup)
    6 egg yolks
    60ml vegetable oil (¼ cup)
    1 tbsp vanilla essence
    150g cake flour (1¼ cups)
    30g cocoa powder (¼ cup)
    For the icing:
    400ml fresh cream (1⅔ cups)
    100g icing sugar (¾ cup)
    2 tablespoons cocoa powder
    1 tablespoon vanilla essence
    For decorating:
    80g dark chocolate (⅓ cup)
    40ml fresh cream (2½ tablespoons)
    Instructions:
    Preheat your oven to 170⁰C (340°F). Beat the egg whites with a pinch of salt until foamy, gradually adding in the sugar. Next, blend in the egg yolks, vegetable oil, and vanilla essence. Sift in the cake flour and cocoa powder, gently folding the mixture until combined. Pour the batter into a greased cake tin and bake for 10-15 minutes, or until a toothpick comes out clean.
    While your cake is cooling, prepare the icing by whipping together the fresh cream, icing sugar, cocoa powder, and vanilla essence. For the final touch, melt the dark chocolate with the fresh cream, then drizzle over the cake for a decadent finish.
