When I was a kid, I really thought they were ACTUALLY playing those candies perfectly on pitch. It never occurred to me that there was a full orchestra playing flutes in the background.

I do agree with you here, but I believe the movie is set between 1910 and 1913 (I personally believe it to be 1911)
Because it has been stated that the film takes place is Pre-WW1 England, and the title card races take place from 1907 to 1909, and when the children found the car it must have taken a long time for it to have become such a wreck, even after being engulfed in flames,

Yeah, Mary Poppins was made in 1964. Chitty Chitty Bang Bang was made in 1968.
It's impressive that Van Dyke still remembered that move when he was performing this dance scene.

I've loved this film since I was a kid, and still do. The critic in me can't help but think though of the amount of confectionery that would've needed to be scrapped at the end of this scene due to animal contamination, and the dollar/pound value attached to that. Add the following scene where Caractacus advertises a service (hairdressing) and then gives a customer a haircut that makes the customer a laughing stock. In the real world and in today's age, Potts would've very likely been sued into the gutter by both the factory and the customer.

Loved this movie growing up. As a child, we had this bamboo cane and we would attempt to follow along with the dance later in the movie (key word is "attempt"). I have one ingrained memory of this movie that, sadly, due to remastering no longer exists where the audio in one of the moments where the whole on-screen crew is singing sounded like only what i can describe as a passing plane. This rushing sound of noise due to the mass amount of voices chorusing together and I loved it. I rewatched this for the first time in DECADES a few months ago and had this weird whiplash moment when the voices all sounded completely normal and not distorted in any way lol

Even for a "Bit Part!" The expressions on the faces of the chorus members that make up the factory workers!... Their reactions to what Caractacus, Lord Scrumptious & Truly are doing, saying and singing, and to what's happening all around the factory! For instance, the gentleman in the white lab coat, holding the tray for Lord Scrumptious to sample...The way is eyes bug out when Caractacus interrupts Lord Scrumptious to ply his wares...and the way the man elates at that last note! ...Very "realistic" acting!

In the olde days, one needed to be able to sing, dance, and act. Sometimes backwards and in heels (looking at you, Ginger Rogers). Whether by talent, hard work, gumption, or a combination of the three, you still needed to have the big three to be cast in anything. And while I am all for returning to that standard, at the same time I wouldn't say that there are no good actors or actresses (whichever term they themselves prefer) anymore. Just a shift in focus caused by a change in the times.
