  • This video shows the donut flour, yeast, egg, milk, and water being combined in the mixer and then running the mixer for 24 minutes at speed 4. Be careful to not mix for than 8 quarts at a time as this will overstress and damage the mixer machine. Only mix using the big Doyon machine. Each of the plastic container can hold 2 "Quarts" or 8 pounds. In the donut mom-pop slang we say we make so many "quarts" a day. I normally make 7 quarts a day on slow days and up to 12 quarts on busy days.
