But yes in Shahi dish cumin or coriander seeds are not part of garam masala as separately cumin powder, Coriander powder are used.. and yes. Love your effort to keep things as authentic

Dear Mazhar bhai, thank you for delivering upper suggestion by a mashhoor chef, but my analysis says that "Ground Fine" and Ground Coarse" depends upon recipe and situation. 90% Desi recipes use Fine ground spices, only few need Coarse spices. But this my analysis.

Roasting is south Indian tradition not north Indian
Also there is no specific stage of cooking for adding garam masalah. It depends what you are cooking
