    Catching up with this and loving it. Remember when we first married in the 1970, we had a Jackson cooker with a rotisserie and used it a lot to do chickens. We took one with us to a bungalow we'd rented and after we'd eaten the flesh, my wife put the carcass out for the birds. Unfortunately, a huge crow came down and flew off with the whole thing.

    Good evening Rick. I have been binging on your recipe videos since I discovered you a week or so ago and your experience and knowledge really shine through. I love your no-nonesence down-to-earth approach and your apreciation of traditional regional recipes. Being a Scouser, I like yourself, love my food and it doesn't have to be fancy, just simple home cooking without all the faff and I'm happy. How's about a video on gravy making to go with your delicious recipes or maybe a Scouse video, or have you already done these and I haven't found them yet? Thanks for sharing your knowledge, keep up the good work.

    I have just bought one of these machines, it did a terrific rotisserie chicken, I have the rotating basket as well but the chips took far longer than I thought they would and the other thing is that when the rotisserie is being used, that is all you can put in there. I will persevere but I am not totally happy with it, maybe as I get more used to it and do some of Rik`s dishes, I will be happier with it.

    I have found that although the Air Fryer does a great cookery job with the rotisserie, it does tend to make a lot of burnt spatter on the inside of the fryer and it is very difficult to clean. I did do a roast chicken in an oven bag and that worked out really good, I don`t know if I gained anything from using a roasting bag on the rotisserie but it felt like I was achieving something good, it all tasted good anyway.

    Hi Rik. Going to try the pork loin this weekend. What is the science to adding baking soda to the potatoes. ?

    • @BackyardChef
      @BackyardChef  8 месяцев назад +4

      Hi Eddie, Adding baking powder to the water when boiling potatoes can affect the texture of the potatoes. Baking powder is alkaline, and when it's added to the boiling water, it raises the pH level of the water. This higher pH can break down the potatoes' pectin, making them softer and possibly mushier more quickly. This can be desirable if you're making mashed potatoes or any dish where you want the potatoes to have a softer texture. It can also help to create a fluffier texture once the potatoes are mashed. Also, it's desirable if you want to roast - the potatoes have a fluffy edge and are easy to crisp. Best, Rik
