This recipe is TOO easy! | Prosciutto, Spinach, & Mozzarella Stuffed Pork Loin on the rotisserie.

  • Honestly, recipes don't get much easier than this. Don't let butterflying a pork loin scare you. It is super easy to do and the results are nothing short of AMAZING! Dad cooked his stuffed pork loin on the rotisserie of his air fryer but you can do it in the oven if you don't have one.
    Ingredients:
    2 lb pork loin
    1 Bag of baby spinach
    1 cup shredded mozzarella
    3 tbsp extra virgin olive oil
    8-16 slices of prosciutto
    2-3 tbs minced garlic
    Garlic powder
    Onion powder
    Sea salt
    Black pepper
    1 tbsp dried basil
    1 tbsp dried thyme
    Equipment
    Sharp Knife
    Cutting board
    Meat tenderizer mallet: amzn.to/3ltzXBp
    Butchers twine
    Rotisserie oven: amzn.to/3sNCDOw
    Or roasting pan: amzn.to/3NtkrRY
    1 Gallon Ziplock freezer bag
    Instructions:
    1. Butterfly the pork loin per the instructions the video.
    2. Place the loin inside a 1 Gallon Ziplock freezer bag. Pound it flat using the meat tenderizer mallet. Use the studded side on one side of the pork.
    3. Cut shallow slices in a cross pattern across one side of the loin as per the video.
    4. Season generously with the dried spices.
    5. On the side with the slices spread out the minced garlic and drizzle extra virgin olive oil on it. Work the garlic & spices into the slits.
    6. line the loin with the prosciutto first, then the spinach, and finally the mozzarella.
    7. Roll the loin into a tight package as per the video. Secure it with butcher twine.
    8. Cook at 350 degrees on a rotisserie or the oven in a roasting pan until the interior temp is 145 degrees. If you want it more done cook until 165 degrees.
    9. Let the loin rest for at least 20 minutes before slicing.
