My grandmother was from Lebanon and she used to prepare this but with eggplants instead zucchini. Same recipe same ingredients but with eggplants. So delicious. Thank You for bringing to me good memories from childhood.
Yeah we do it too with eggplants but I like the zucchini it taste better 🙈

One could do a cocktail with eggplants and stuffed Tomatoes and wine leaves how my mom did it nice decorated near eachother the pot looked like a flower wow. One could stuff also without meat.. Vegan. Sooo yummy but without tomatoe sauce.. Love lebanese food. It is the best in the world..

i made this dish and let me tell you it came out so good what i did is i combined beef and lamb meat but the second time i made it i only used lamb meat and i cooked it this for 1 hour and 50 mins it came out so good

There is a rich history of vegan foods because of the monastic tradition within Lebanon and the region. Look up hashu orteh. This was a vegan stuffing used to replace meat based stuffing for foods either made in a monastic environment or during Lent, as well. It is based on chick peas, parsley, mint, tomatoes, spring onions, rice, spices and za'atar with olive or nut oils and lemon juice.

U can clean them both ways it is okay .
excellent, I tried this recipe and method, so delicious you can't believe it. Just let the cooked squashes cool a bit and you can pick them up and eat them with your hand, it is so delicious.

how many grams of meat did you put?
For each cup of rice u can add 400 g of mince meat but u can add less if u want .

Jennifer S Hi u can buy this tool from any Mediterranean shop they sell these Arabic rear tools also u can find it on eBay or amazon it called zucchini corer .

Hello Smiley Girl. When I was a girl, the old Syrian ladies at church used to freeze the cored out squashes. Since I quit going to church in high school, I never found out how they did that. Do you know of anyone that freezes these and how they do it? Also, my sitto used to take the insides of the squash and squeeze the water out of it and when it was really dry, fry it up with garlic and onions. When the steam let more water out of the squash, she would crack some eggs in it and stir it around. That was the best morning-after-coosa breakfast ever. I don't like it when the insides are cooked and they're really wet. But every family cooks different and every region too. Love your videos.
U can’t freeze the zucchini they will get so soft and soggy
You need to core the zucchini first and freeze them. When you want to cook them make sure you have the stuffing ready so you can stuff the zucchini as soon as you take them out of the freezer. Do not thaw the zucchini stuff it as soon as it comes out of the freezer.

This afternoon my husband brought home a dozen zucchini. He is from Saida, Lebanon. I LOVE to be challenged in the kitchen. I grew up in Veracruz, Mexico, as a missionary kid, so we already use many of the same spices a cook similar dishes. There is a spice you add to the sauce, a red powder type spice. I wondered if you might tell me what this spice is in English. It doesn't sound familiar in arabic, so I am wondering if here in the US I might find its equivalent. Love your recipes. Enjoy the way you so light heartedly explain things. Makes cooking fun. 😉

Linda Nedilsky If u are a vegan so u can make the filling only rice and chopped tomatoes salt and spices that’s how I make my vegan stuffed zucchini same way but the filling is different 😍

This is a Turkish cuisine ,it's called Dolma .In my country Algeria, we staff the potatoes, artichoke ,the onions , the tomatoes and make rollers with cabbage leaves using the same staffing. .we cook in a sauce or in the oven .so yummy

nadia nadoush I am Turkish and it is not a Turkish recipe. We cut the zucchini in half and scrape them hollow that way. We also add dill into the rice mixture and don’t always meat. You can make it without meat. To my understanding, Lebanese cousa almost always has meat.

They are actually baby marrows. Zucchini or courgettes are darker, sometimes striped, and are more like cucumber.
Americans call them Squash.
And not easy to find in Canada :/ same as baby baby egg plant

forget the chiken stock. I use white wine!
Lovely! I add the dried mint about 20 minutes before it is done cooking so the mint flavor is more pronounced.I hope you did not throw away the zucchini seeds......They are perfect for Ihjee Koosa {omelet}

Looks nice and delicious but you forgot something very important, when filled and dropped in the pot you need to cover the zucchini with a dish on top to keep them in place or you'll have a Tuttifrutti Kousa 🤪😁
