    I love your videos. You always say how you’re not very educated. My dear you are an amazing source of knowledge. You should never say such things about yourself. To me and all your viewers you are very educated and full of wisdom. I’m not in a position to do 1/10 of what you do but I sure enjoy your videos and have learned a ton from you. So thank you.     Dear Ruth, I wanted to reach out to thank you. My name is Linda Kosarski and I am the winner for the Bosch mixer and Dehydrator. I have never won anything and I am so excited to get these. I am 82 and I still like to can food and cook. I have made many of your recipes and when the mixer comes, first thing is your cinnamon rolls and bread. I don’t put icing on my cinnamon rolls. What I do is put butter in a sauce pan with brown sugar and just a little cinnamon and also some chopped nuts. I bring to boil for minute and then I spoon it over the top of cinnamon rolls.

    I never get tired of watching you make cheese. You add 2 simple ingredients to milk and it turns to cheese. It's almost magic!!

    My grandmother had a grater like yours! My holiday job was to grind Nilla Wafers for her to make rum balls for Christmas gifts! It has gone missing since her passing and I get a tug on my heartstrings when I see you using yours!

I grew up on a small farm in eastern KY and many of the things you talk about are familiar from my childhood, but I never acquired the skills.     Thank you so much for showing us these cheese making and other ways of making things. Since my health had declined I started making almost everything from scratch including hot dogs, kielbasa and Italian sausage all using chicken. You are an inspiration to me

    I remember when growing up getting a gallon a weekbb by of milk. When a neighbor farmer said he had extra milk from his cows and told my mom if she brought gallon jugs to put it in she could have 2 gallons a day. We were overwhelmed. Us kids were allowed milk with everything. We started making our own butter. My mother was from the city and we didn’t know anything else. This was in the 70’s. I sure wish I knew how to have made more. We moved away a year later . Sure missed all that.

      I look forward to every video you post. Anything you buy off your farm needs to have tax added as part of the calculation. Each dollar spent has had tax paid o it.
      Really looking forward to trying this with store bought milk (my only option). I hVe read so may companies even add chemicals to ricotta cheese. The only brand I can find without is $6 here in Ontario.
      Do you know of a good source for the citric acid or renit?

    I am really new to your channel but i really enjoy it, but my husband loves mozzarella cheese. So I'm sort of catching up on your channel. I don't know ì think the cat loves that milk. I think you are a wonderful mum and you have a lovely family. My name is Jean and i come from Scotland UK which is a beautiful country which i love.     Ruthann, I agree with everyone. You explained the process so thoroughly for me that, I will try again. I tried to make mozzarella one other time and it was a fail. Now, I know why!     Good morning family and RuthAnn. Being busy is a wonderful way to past the time away. But a good busy. I love frozen yogurt, it is just as good in frozen form as ice cream. Love watching your home video's on the farm, makes me want one. Love the many waus you do your milk. Have you ever freeze dried it? Congratulations to the winner.       We don’t have a freeze dryer so don’t freeze dry it.

      @Ruthannzimm ok. I've just seen alot of homestead families that have bought them and freeze dry just about everything. Then, if you want fresh fruits in wintertime, you rehydrate them with a little water. . They are a little pricey but the wonders you can do with them.

    Thanks so much for this tutorial on mozzarella cheese. I was making our favorite - cheese curds- as I was listening/watching your video. I have made mozzarella with ‘some’ level of success but your tutorial by far is the best. I appreciated your advice at the end, saying that no ‘one’ way is the right way and to watch and learn from a bunch of people and do what works best. I have seen several people use their hands and, by necessity, their arm to stir and break up the curds. I have always used a spoon, thinking that there might be bacteria under my nails or on my arm that might get transferred to the cheese. Do you use any special solution to wash your hands and arm before starting the process of stirring and breaking the curds? Thanks so much for your wonderful tutorials!

      Not when I’m making mozzarella. Because I’m not aging it I don’t worry about bacteria as much.
      When I’m making aged cheeses I just wash my hand and arm well with hot soapy water and I keep my nails short for milking so they’re usually clean.

    Hello 👋 again sweet friend. Another great recipe you've shared today and more great tips too. Thank you thank you thank you. I've been busy this past week and weekend getting my plants in my pots and I went yesterday to my daughter's house and helped her transplant her plants as well. I've FINALLY got her interested in growing her own food. Well I started with a couple plants this year so she don't get overwhelmed but I just want to thank you for all the knowledge you've shared on your channel. My daughter and I have decided to try to find some land and house big enough for all of us or land with two homes in it or I'd accessable for two homes so we can live more frugal and not have to participate in the system as much as it's just become evil from all angles. So sad but true. Anyways I thank you for a big part of this inspiration. IDK if it will be a year. It may take longer but at least we have our end goal figured out. God will provide a way no matter what happens this I do know. Love you guys and sending hugs and good vibes from VA/TN. Can't wait for next weeks video. God Bless

    the whey can be used to make Scandinavian brown cheese. they put the brown cheese on their waffles along with a berry jam. i bought some at whole foods market, it comes in a red packaged cube about 2 inches x 2 inches, and they charge about $10. tastes great. it takes a lot of whey to make it...but it's one more thing to make instead of giving it all to the pigs. love your videos.

    I did not realize until I saw you on the speaker list for the McMurray homestead site that you live in NE Iowa.
    My husband is from the Waucoma area and we currently live right in the edge of WC on a small homestead.

      Yes we do have TV. Mostly we watch sports.

      Theres a large screen tv mounted over the fire place in the living room. The few times I saw it being watched it had sports going.

    I have learned so much from your videos. I'm at the start of the journey to grow, raise, can and preserve. Where did you purchase your butter churner? I live in Canada but will order from your sites and have it delivered to a friend that lives in the US. I see her once a year, we catch up, fabric shop, share recipes and collect everything I've ordered. I can't wait until August.

      I think knits intimidating because we haven’t seen it done very often!! The more we are exposed to something the less intimidating it becomes.
