This looks awesome, it's been a while since we had a soup on here to try out. *If you ever get a chance you should watch Sweetness and Lightning* it's a good anime that came out shortly after Food Wars but got overshadowed. It's about a single father and his 5 year old daughter meeting up at the restaurants one of his students owns and learning to cook together after the death of his wife. It's really sweet and cute but they also make a ton of really cool recipes such as chicken wing gyoza, Hamburg steak, and vegetable gratin with bechamel sauce. It's worth checking out if even if you never make anything from it though lots of the recipes are cute and simple

Hey, thank you guys so much for this recipe! Currently in the process of making it now. Have to say, other than chopping up all the vegetables, the hardest part has definitely been actually finding the purple carrots and potatoes! Luckily, my local Fresh Thyme has one bag of rainbow carrots with just enough purple ones for the recipe - the other bags all had roughly 2 purple ones, if that. Found the potatoes at Trader Joe’s in a nature’s bounty mixed bag. Had to buy 3 bags to get enough purple, and I don’t think they’re sweet potatoes, but I’m hoping the soup will still be just as delicious as yours! :-)
