Recipe for pumpkin pie: Ingredients: For the crust: - 1 1/4 cups of all-purpose flour - 1/2 teaspoon of salt - 1/2 cup of unsalted butter, cold and cut into small cubes - 2-3 tablespoons of ice water For the filling: - 1 3/4 cups of canned pumpkin puree - 3/4 cup of granulated sugar - 1 teaspoon of ground cinnamon - 1/2 teaspoon of ground ginger - 1/4 teaspoon of ground nutmeg - 1/4 teaspoon of ground cloves - 1/2 teaspoon of salt - 3 large eggs - 1 cup of evaporated milk - Whipped cream, for serving (optional) Instructions: 1. Preheat your oven to 425°F (220°C). 2. In a mixing bowl, combine the flour and salt for the crust. Add the cold butter cubes and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs. 3. Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough comes together. Be careful not to overmix. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes. 4. On a lightly floured surface, roll out the chilled dough into a circle large enough to fit a 9-inch pie dish. Transfer the dough to the pie dish, pressing it gently into the bottom and up the sides. Trim any excess dough and crimp the edges. 5. In a large bowl, combine the pumpkin puree, granulated sugar, cinnamon, ginger, nutmeg, cloves, and salt for the filling. Mix well. 6. In a separate bowl, beat the eggs. Add the beaten eggs and evaporated milk to the pumpkin mixture and stir until everything is well combined. 7. Pour the filling into the prepared pie crust, spreading it evenly. 8. Place the pie in the preheated oven and bake for 15 minutes. Then, reduce the oven temperature to 350°F (175°C) and continue baking for an additional 40-45 minutes, or until the filling is set and the crust is golden brown. 9. Remove the pie from the oven and let it cool completely on a wire rack. Once cooled, refrigerate for a few hours or overnight to allow the flavors to meld. 10. Serve the pumpkin pie cold(preferably), optionally top with whipped cream or whatever suits your taste.
