- When Red Snapper, Grouper and other trophy fish are out of season, you can still have fun and put something in the box to bring home for the table. Using a simple, basic technique, I show you how I find and catch fish such as Triggerfish, Mangrove Snapper, Vermillion Snapper and other fish that are just as good to eat and are practically never out of season. I also show you a new, easy and tasty recipe with one of the fish I catch.

Pan Seared Triggerfish With Avocado Cream Sauce
Ingredients
For Fish:
2-4 Triggerfish filets
1/2 cup flour
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp paprika
Olive oil
For Avocado Sauce
1 large avocado
1/2 tsp lime jusice
2 Tbs chopped cilantro
2 Tbs jalapeño pepper, seeded and chopped
2 cloves garlic, chopped
1/2 tsp cumin
1/2 tsp salt
1/2 tsp pepper
1/2 cup sour cream
Instructions
Avocado Cream Sauce
Add all ingredients for the sauce in a blender and blend until a creamy sauce, set in fridge
Fish
Add olive oil to cast iron skillet and pre-heat on medium high heat
On a plate add flour and add other spices and mix
Lightly rinse and pat dry fish, dredge fish in flour mixture to lightly coat both sides
Add fish serving side down to pan once olive oil begins to smoke
Cook 3-4 minutes on each side until cooked through
Transfer to plate and top with sauce or serve on the side
What a fun day. Not much in the box... but that's good fishing for marking reefs for target species when you're ready.

Yeah pretty rough. I actually had my wife and son out at first. We ran a couple miles and turned around and took them back home then came back out. Crazy how off the forecast was.

Thanks! I often throw something out from time to time, just to see. Often I get amberjacks, but that red grouper was cool. Hopefully I can find some bigger once they are in season!

Definitely. That one video that I dropped the GoPro down, it was stacked with triggers. I was even surprised how many were down there.
@ under sized triggers are abundant. My father in law is down in PC today. They caught some nice keeper red snapper and vermilions., sadly cant keep the reds til tomorrow. They are going back out tomorrow
