What do you do if they do 6. .. e6 instead of d5?

Is this not just luck that black takes the b pawn with their c pawn vs just taking with the knight? I don't get it. I think at lower levels, they would def take with knight.

5:21 you try for the same idea with Nxb4 c3 Nc6 d4 cxd4 cxd4 (threat d5) d5 exd5 Qxd5 Nc3 Qa5 and you've transposed to the game with Rb1
