i took a 6 month break from cooking/baking and i forgot that chocolate is sensitive to heat. put it in the microwave in 40 second intervals and it seized. i didnt even realize what the heck happened because i never burned chocolate before. this is definitely a low point in my cooking life

Is there anything you would suggest for melting white chocolate? should white chocolate also have 32% cocoa butter? I want to make chocolate dipped pretzels but I'm more partial to the white chocolate than dark chocolate.

One tip, not all ovens and chocolates are made evenly so sometimes the microwavr method won't need a 15 seconds interval, sometimes it was less and that was definitely my case

I tried making peanut butter truffles and did literally everything wrong
    I used hershey milk chocolate

I added water to try and make it more "saucy"
It literally is as simple as, you need patience when melting chocolate

My melted chocolate never gets that runny. I'm in the process of making peanut butter cups now and I think I'll add some coconut oil to the second half of the chocolate that I put over the peanut butter before reheating what's left in my jar and see if that will work better. I'm using Nestles Semi-sweet chocolate chips.

I think you could use any heat-proof container over the pot of boiling water. For example, you could just use a smaller pot over the boiling pot and it would work (as long as it doesn’t fall in).
