Tofu vegetable stir fry Ingredients: 200g Tofu/Paneer, cut into cubes 4-5 broccoli florets, chopped 1 medium carrot, chopped Half red bell pepper, chopped Half yellow bell pepper, chopped 1/2 cup chopped zucchini 4-5 cloves chopped garlic Salt to taste Toasted sesame seeds & chopped green onions to garnish 2 Teaspoons oil 1/2 Teaspoon corn flour 1 Tablespoon thick soy sauce/2 Tablespoon light soy sauce 1/4 cup water 1 Teaspoon honey/Jaggery powder 1 Teaspoon red chilli flakes/chilli powder -Chop some veggies of your choice, I have taken carrot, bell peppers, zucchini and broccoli. Finely chop 5-6 cloves of garlic. Take 200 grams of tofu or paneer and cut them into cubes. * Heat up a pan add 1 teaspoon oil and saute the tofu until it’s golden brown on both sides, transfer to a plate. In the same pan heat up another tea spoon oil, add the chopped garlic then add broccoli and carrot, cover and cook for 2-3 minutes as they need more time to cook, then add rest of the veggies and saute for another 2-3 minutes. The veggies has to be crunchy in stir fry so don’t over cook them. * To make the sauce, take 1/2 teaspoon corn flour, 1 tablespoon thick soy sauce added to 1/4 cup water, 1 teaspoon honey, 1 teaspoon red chilli powder or chilli flakes and mix them well. Then pour it over the veggies and saute until the sauce thickens. Garnish it with toasted sesame seeds, green onions and enjoy with rice or noodles.
