I have been eating the pollen spikes all spring up until 2 weeks ago. The pollen spikes are very delicious and in my region are available from late May to very early July. The male pollen spikes are on top, the female flower heads (brown hotdogs) are below. The female heads ARE edible while in-sheath, but there's almost nothing there. When harvesting, avoid plants near any area of travel and habitation. E.g. roads, railroads, cities and so forth.
