As a longtime vegetarian/vegan, I have to admit that my default cooking style and flavor profile has been stuck in the Asian-inspired realm. Thanks for cooking up something completely outside of that box! I am definitely going to grab a bottle of red wine next time I'm at Trader Joes.
I’ve been following the 80/20 diet this past year. My health is much better. We don’t need all to eat all that meat. I’m not vegan either but I’m now more conscious of my meat consumption so I really eat meat for occasions or when I want to make a meat dish at home.
MARINATE YOUR TOFU PEOPLE. What the hell. Just to clarify - I love and eat plain tofu all the time. I just see people preparing tofu for tofu novices or primarily meat eaters without marinating and then I always run into people who complain that it's "flavorless". So, I say marinate!
I eat plain tofu all the time, but I don't expect anyone to be me. I think the problem is people want tofu to be meat, and people forget meat is marinated too, you know?
@@v0zbox frying, freezing and pressing all cause the tofu to release moisture. When it's drier, it'll soak up marinade/sauce a lot more readily. Like a sponge, if it's already full of water, it can't soak up any more.
*Also not everyone can afford to eat vegetarian or has the time too. It gets easier every year, but vegans are usually well off self righteous white people with lots of time, support, and money*
@petrixhore no one needs meat. But for people with low iron and stuff like that, then eating meat would definitely help you get it easier. But if you want to be vegan/vegetarian it’s still possible! 😊
@petrixhore fruits, veggies, beans/legumes, oats, potatoes, rice/quinoa are all the cheapest foods in the store 😊 only thing expensive are vegan mock meats and that stuff
Probably one of the best I've found over the years. I've watched a lot of cooking videos and read a lot too. I like that you address meat consumption and most of all I like your recipes. The flavour and proportions seem exactly tasty.
I made this on the weekend and it was FAB! Polenta the first go-round and then the following day I combined it wth leftover Israeli couscous and it was equally divine. Such a great recipe. Thanks, Melissa, I love the 80/20 idea!
I don’t really follow recipes that I watch videos on, it’s usually just entertainment, but I’m really excited to try this recipe. Most of the ingredients didn’t feel so obscure and you gave lots of subs for the items that I may not have heard of! Great job NYT!
Ignore these random people! It's totally doable, especially if you focus on reduction, not elimination. Reducing your meat and dairy intake is still very helpful and good for your health. You don't have to go 100%. Get yourself a fun vegetarian or vegan cookbook and try incorporating some of the recipes each week! I'm doing that right now and it isn't hard or scary. I'm having lots of fun trying new recipes and foods. Good luck! Also, videos totally help! They are inspiring and informative. I swear to god there are bots all over RUclips trying to stir up fights in the comments. Ignore them and follow your instincts.
I love this video! I think her approach is so great for those who are skeptical about a more plant based lifestyle. It’s not about being a perfect vegan or 100% zero waste. It’s about the small changes. Diets with more plants based options worked in are better for your health and the environment, so, win win!!! Also, she’s great. would love to see more content from her.

I have been talking to my hubby about being more responsible for our carbon footprint. I am not interested in becoming vegan and my husband even more so, but we all know the meat and dairy industries are major contributors to eroding our environment. Thanks for outlining some options. I will definitely be cooking more pulses this year. They are yummy. Happy New Year to everyone! 🥳
Yep! Already living 80/20 lifestyle and I feel healthier than ever! And it feel so special when I buy some special cheese etc. I say no most of the time to red meat, but sometimes ribs are just divine!
really like the approach here, entirely non-patronising and digestible for people who are daunted by the prospect of jumping to vegetarianism or veganism
People should be daunted at the prospect of vegetarian or vegan diets. Those diets are lacking in essential nutrients and vitamins. Many people have become sick on the vegan diet.
I'm French-Spanish-Italian and I think this looks so awesome and delicious! Keeping my meat and dairy credits for St Felicien, gorgonzola-mascarpone and lomo
This is sometimes called a "Reducitarian diet." The highest impact version of that diet would be to boycott beef and dairy, since raising cows has the biggest environmental impact.
I love this 80/20 rule. I may start at 60/40 and build up from there. Im like her, I don’t need meat to be happy, but I like to enjoy my meat when I eat it. This recipe looks amazing. I LOVE mushrooms. Butter, eggs and cheese are a must for me, the rest I don’t care honestly
This is why I call myself a flexitarian! I'm happy to splurge occasionally, but my rule is only 1 meat product per day, and only on the days I work out. If I worked out, chicken breast is just such a protein-dense option and I can't stand endless protein shakes. I've completely "converted" to vegan cheese because they make it so much better these days! Sometimes I'll do goat, admittedly. Overall, I feel much better eating no dairy, I think we're all a bit intolerant. By eating this way you're doing great things for your health long-term and the environment! More flexitarian content please!
More and more people should watch this ❤ it's not about cutting out something completely, going cold turkey. It's about making small changes that can impact the world in incredible ways 🌏
Miyokos vegan butter. Get into it. I use coconut oil for 80% of my butter subs and Miyokos for the 20% that really needs it. They also have awesome vegan cheese.
This is genius. I am totally making this. Doing the Mediterranean way of eating which calls for reducing meat, and when you do eat it, it's not the "star". This would totally fit within that. And looks terrific. I probably eat 80/20, though I have never really kept track.
Underrated protein source: lentils. Cooks quickly, super versatile and super delicious. Indian vegetarians have survived on that stuff for thousands of years. Indian stores usually carry the whole range of lentils, each of which have a very distinct flavour profile so you never get bored.
I'd love this as a series, and I'd love more plant based recipes, like Melissa, I'm also trying to eat less meat and dairy. I love fish but I almost don't eat it anymore because of overfishing and ghosts nets and other fishing waste.
Making the Indian butter chickpeas and the mushroom bourguignon later this week. Excellent suggestions in this video. I too cannot (for now at least) give up on butter and cheese, but I can totally get behind more plant based food that is high on flavour.
As a vegan, I really appreciate this approach to eating less animal products. We all need to be realistic. I cant expect everyone to go vegan (yes I would love it), so her approach is something I often suggest to my meat eating friends to practice.
Honestly, I will never go full vegetarian but I try and have at least 1 meat free meal per day and I love it. Also: to ANYONE on a budget, eating vegetarian is WAY cheaper. Beans and rice will last you a VERY long time. I've had to make $10 last me a week and vegetarian was the only way I was able to do it.
“I am a committed carnivore…and I think we should all be eating *a lot* less meat” Total respect. You can be a meat-lover and still admit cutting down on meat & dairy can still help so it’s worth doing it if you can. My diet has been pescetarian for years so i can eat eggs, dairy & seafood but I mainly eat plant-based because it’s what I prefer
Interesting....this 80/20 rule is exactly how I've been doing my whole life. I'm not vegetarian but I don't love meat so it was natural. I feel like 80/20 (and cooking at home) makes is extremely easy to maintain health and weight without worrying about it. Especially for cholesterol and blood pressure. Also I would recommend Indian cooking....the more flavorful the meat is, the less you need. Cook some beef curry and you will end up eating maybe 3 ounces if you're being generous. Make a steak, and it gets crazy.
Notmytoe if you don’t love meat why eat any? There is so much suffering that comes with meat. You could replace it with tofu, beans, legumes etc. And yes on the Indian cuisine 💯 (I do prefer Thai curry though) I usually eat a tofu curry but a chickpea one would be good too
@@CasianaCarmazan if we all followed this we wouldn't have a problem & animals eat animals that's just the way it is and some ppl like me absolutely hate rules and restrictions i know it's for a bigger cause but i believ this method is just as good if everyone that doesn't want to give up meat followed it...
An 80/20 diet would help, but if you aren't switching to a fully plant based diet, there is a better option. These are both sometimes called different versions of a "Reducitarian diet." The highest impact version of that diet would be to boycott beef and dairy, since raising cows has the biggest environmental impact.
I'm "veganish" and I really enjoyed that my chinese american ex didn't *need* meat in every dish and was good at cooking tofu. I also thought of asian cuisine when she talked about just using a tiny bit of meat to flavor the dish rather than it being the main thing like my mom's potroast. Meat use to be kind of a delicacy and since america got relatively wealthy we eat a ton of it as a flex but at this point it's not doing us alot of good.
Thank you for posting this. The 80/20 goal is a great strategy. You make plant-based accessible for those who aren't ready to make the switch to full time vegetarianism.
I hate mushrooms passionately but I found (they’re very good for you; minerals) that dried ground mushrooms added to things works for me and especially I love this with salmon which I’d never think possible
I think I'm gonna try this. I don't have all the ingredients now but the recipes look really delicious. And while I dont think a fully vegan diet is really healthy (maybe to some people, not to me I have tried) what you suggest is seem a far more doable and most likely can keep you healthy and fit.
I feel so much better when i reduce meat intake by 80- 90% ! I just feel sad so many people are sick and unhealthy and they don't even know the solution.... it is so simple... reduce meat intake and balanced diet.
That’s been my approach to cooking and eating for the past 10 or so years, for exactly the reasons you state. Not only do I feel great, but when I have meat I enjoy it so much more. Also, I’ve discovered all sorts of ingredients that I hadn’t thought of using before, such as barley, tofu, etc.
First off, I love the simplicity of the 80/20 rule concept! I love meat too but find that I tend to eat too much of it which hinders my fat loss goals. So I am looking to find a balance where I can make veggies and plant-based foods a priority while not eliminating meats entirely, just reducing my intake for health reasons. I also find that when I eat less meat I tend to have more energy and smoother bowel movements.
Very informative, inventive, and educational! Thanks for letting us know about mushrooms not absorbing too much water, I notice you also have Nigella’s Salt Pig in Blue!
I love this. I've been vegan for a few years and people always say, oh I could never cut out cheese or bacon. So don't? People think they have to go all or nothing but everyone has their own style. Eat whatever you want but be conscious.

Me too. I'm eating plant based 5 days a week and it's actually growing on me. I don't even crave meat nowadays
Seriously Miyoko’s vegan butter is fermented. It tastes like butter, no palm oil and it melts like butter. It is brilliant!
Elaine Montier where can I buy it?
@@ksobiesiak2547 Target, Safeway and Whole Foods all carry it!
Wish we had this in Australia!
^ the Tofu Gospel. Lately I've been soaking tofu in sauce/marinade AFTER pan-frying. It seems to soak up flavors better when it's hot.
@@v0zbox frying, freezing and pressing all cause the tofu to release moisture. When it's drier, it'll soak up marinade/sauce a lot more readily. Like a sponge, if it's already full of water, it can't soak up any more.
Dry fry and then marinate. The only way I cook tofu.
I eat tofu uncooked with soy sauce and ginger
I need more of her personality and charm in my life
Her message is essentially mine as well. Just eat less meat not omit it. If we all did that, wouldn't that be awesome?
What would be awesome if people stopped half-assing things they believe in and stopped altogether
@@tomatotortilla because its not healthy
*Also not everyone can afford to eat vegetarian or has the time too. It gets easier every year, but vegans are usually well off self righteous white people with lots of time, support, and money*
@petrixhore no one needs meat. But for people with low iron and stuff like that, then eating meat would definitely help you get it easier. But if you want to be vegan/vegetarian it’s still possible! 😊
@petrixhore fruits, veggies, beans/legumes, oats, potatoes, rice/quinoa are all the cheapest foods in the store 😊 only thing expensive are vegan mock meats and that stuff
There is actually a replacemt for butter! It’s called Myoko and it’s made with coconut oil. It is outstanding!
More vídeos like this....I really want to reduce meat and dairy intake 😊😊
Watching a video isn't going to help
Me too!
You could just do it. And not eat it at all.
We made this tonight and it's really really good!

I have really loved Melissa Clark's vegetable-forward options and have wanted to make this recipe for a long time.
Yes! Thank you for making 'eating less meat' accessible to all! You do NOT need to go vegan to make an impact!
This should have so many more views. As a vegetarian, I love this !
She's so likeable

I love this video! I think her approach is so great for those who are skeptical about a more plant based lifestyle. It’s not about being a perfect vegan or 100% zero waste. It’s about the small changes. Diets with more plants based options worked in are better for your health and the environment, so, win win!!! Also, she’s great. would love to see more content from her.
I couldn't stop eating without stopping and I was starting to look fatter 🐮 than normal, but thanks to Keto I lost more than 70 pounds with keto in my first year, no rebounds, it's sustainable Thanks to Keto today I feel great !! always satisfied and sure of myself.🥰👩🏽 Today is my day 480. 🙌🏾
Loveeee herrrr ♥️♥️!!!! She’s so fun to watch
Absolutely going to make this, not because it’s “vegetarian-ish,’ but because it looks so delicious.
it does look delicious!
She's THE BEST! Love Melissa's NYT cooking vids! Thank you. :)
I really wanted her to tell us how she made the butter chick-peas omg
And this is why I LOVE you....and your recipes and your cookbooks. This is a wonderful approach.
really like the approach here, entirely non-patronising and digestible for people who are daunted by the prospect of jumping to vegetarianism or veganism
This is sometimes called a "Reducitarian diet."
The highest impact version of that diet would be to boycott beef and dairy, since raising cows has the biggest environmental impact.
You are genius! I am a vegan but my daughter and husband eat like you. Love this video💚💪🌱🌏🌎🌍
I watched every minute of this video. My 2020 goal is to eat less meat and I am so going to try the mushroom Bourguign
on recipe this week.
More and more people should watch this ❤ it's not about cutting out something completely, going cold turkey. It's about making small changes that can impact the world in incredible ways 🌏
Love the way she explains things. Such a great approach to life too!
Miyokos vegan butter. Get into it. I use coconut oil for 80% of my butter subs and Miyokos for the 20% that really needs it. They also have awesome vegan cheese.
I love this woman. What a wonderful personality.
This is genius. I am totally making this. Doing the Mediterranean way of eating which calls for reducing meat, and when you do eat it, it's not the "star". This would totally fit within that. And looks terrific. I probably eat 80/20, though I have never really kept track.
She is so dynamic! Great job presenting and I'll definitely have to try this recipe!
Underrated protein source: lentils. Cooks quickly, super versatile and super delicious. Indian vegetarians have survived on that stuff for thousands of years. Indian stores usually carry the whole range of lentils, each of which have a very distinct flavour profile so you never get bored.
Did I tell you that I fall in love with Melissa Clark? We need more of her.
This was FANTASTIC!! Please more videos like this!!
I didn't know what to expect with this article. What a surprise! Very well thought out, I'm going to take this idea for myself.
Great job, Melissa! Great recipe!
She's just such fun
“I am a committed carnivore…and I think we should all be eating *a lot* less meat”
Total respect.
@@Remedy306Learn to spell correctly.
Same im Syrian and most of our food can so easily be veganizd
These are both sometimes called different versions of a "Reducitarian diet."
The highest impact version of that diet would be to boycott beef and dairy, since raising cows has the biggest environmental impact.
I really enjoyed this video. Thanks for all the great information and I can’t wait to make that receipt.
I love this video. She makes it seems fun to do try this for people who are afraid to try. I already do this.
Imagining this over polenta for right when the cold snaps next autumn
Well done! Would love to see a series of this topic.
This is the way I have been eating for the last few years.
@@Remedy306 Just fine!
This is right up my alley
I hate mushrooms passionately but I found (they’re very good for you; minerals) that dried ground mushrooms added to things works for me and especially I love this with salmon which I’d never think possible
Really appreciate this video! More vegetarian dinner ideas from MC would be wonderful! Just re-organized my week of dinners based on this. 😊👏
I think I'm gonna try this. I don't have all the ingredients now but the recipes look really delicious. And while I dont think a fully vegan diet is really healthy (maybe to some people, not to me I have tried) what you suggest is seem a far more doable and most likely can keep you healthy and fit.
Great video! I definitely want to try the dish.
I made the Mushroom Bourguignon, and it was delicious.
love this approach!
more videos like this/with her please and thank you!
I feel so much better when i reduce meat intake by 80- 90% ! I just feel sad so many people are sick and unhealthy and they don't even know the solution.... it is so simple... reduce meat intake and balanced diet.
I've gotten really into grain bowls recently
Grain is bad for you.
@@pamelapati1219 so statement like that must have a backup. How grains bad for you. Do tell.
Oh, you mean big bowls full of pasta?! Love those!!! 🤣
Ciaoooooo from the ITALIAN FOOD BOSS 💪💪🇮🇹🇮🇹
That’s been my approach to cooking and eating for the past 10 or so years, for exactly the reasons you state. Not only do I feel great, but when I have meat I enjoy it so much more. Also, I’ve discovered all sorts of ingredients that I hadn’t thought of using before, such as barley, tofu, etc.
This is practically the base of Indian cooking principles. Lots of tasty, healthy vegetarian food and meat is eaten in small portions.
This is so fantastic!
I tried the sheet pan meal minus the bacon. I used a honey miso sauce instead of maple but it was delicious!
This lady is awesome!
"tofu with bacon makes it smokier" .. there is also smoked tofu by the way. And it's delicious, I've converted all my friends to smoked tofu
Where do you find it? I am in the states and I've never seen it but it looks so good
I can’t wait to make this … thank you.
Very informative, inventive, and educational! Thanks for letting us know about mushrooms not absorbing too much water, I notice you also have Nigella’s Salt Pig in Blue!
Great recipe and message about moderation. Unfortunately the website won't let me read the recipe without making a bloody account
Gracias ☺️
Miyoko's butter is amazing.
Nice video it’s good advise for everyone to follow. We will be healthier if we follow this.
Check out better than bullion! They have a no chicken and a no beef bullion base! So good!
