Ingredients
For cupcakes:
1 1/4 cup all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
3/4 cup sugar
6 tbsp unsalted butter, melted
1 whole egg plus 1 egg white
1 tsp vanilla extract
1/2 cup milk
1/4 cup wax-coated sprinkles
For frosting:
3 cups confectioners sugar
8 tbsp soft butter
2 tbsp milk
2 tsp vanilla extract
1/8 tsp salt
Food coloring (optional)
Sprinkles (optional)
Directions
For cupcakes:
- preheat oven to 350*F
- In a bowl whisk together flour, baking powder and salt
- In another bowl using electric mixture, cream butter and sugar on medium high speed. Until light and fluffy. About 2 minutes. Add the egg and beat until combined. Then add egg white and beat till combined. Add vanilla extract beat till combined.
- With mixture on medium low speed, add flour mixture in 3 additions alternating with the milk with 2 additions. Beating until just combined. Increase mixer speed to medium high and beat until there’s no more streaks of flour remaining. About 30 seconds. Fold in the sprinkles
- divide the batter evenly among the prepared cupcake cups. Fill each about 3/4 full
- Bake until cupcakes are lightly golden on top and toothpick inserted into the center comes out clean 18 to 20 minutes
- Let cupcakes cool on rack, then add your frosting
For frosting:
In a bowl, using an electric mixture combine the confectioners sugar, butter, milk, vanilla extract and salt and beat on low speed for 1 minute. Scrape the sides then increase speed to medium and beat till fluffy about 2 minutes.
Add food coloring if desired, best till combined.
The frosted cupcakes can be stored in an airtight container in the refrigerator for up to 3 days.
