No, it must plug into a computer, and the computer must have an internet connection to communicate with the bitcoin network. However, hardware wallets such as the Trezor Safe 5 are designed to protect your private key information from being passed to your computer, so that it's never exposed to the internet so long as you protect your seed phrase properly.
Video is missing the most important thing. There is a hologram seal on the Trezor to see that it's not tampered with. Without addressing the most important point, I can't give it a thumbs up.

Yes, you can install any firmware on it. Universal firmware on bitcoin only model and Bitcoin only firmware on universal model.
