- Colva Beach in the south of Goa, with its Portuguese heritage is where traditional fishing families reside. With the very sturdy mackerel (Bangada fish) , Chef Ranveer prepares Bangda Cutlet, a local delicacy. He smokes the fish with a marinade of local pepper Tirphal and much more. He also cures whitebait fish (छोटी मछली), cooking it in a hot sand pit for Whitebait ceviche recipe. He also goes on talking about the culture of eating dried fish, Chef Ranveer fries dried king fish (Surmai fish) in coconut oil for the very famous recipe i.e Kismur. With so many cooking techniques and types of fishes, it’s a feast on the beach.

Mr Brar, another option to wrap the mackerels is banana leaf or turmeric leaf. I love with the Turmeric one as the smell of the leaf infuses with the fish.

Everyone commenting on use of plastic bag... please note that there was no fire used for cooking with plastic bag...only natural heat is used, sun and sand...use of plastic bag is justified..for transfer of heat...thank you.

I am a home chef and cooks veg dishes. I was enjoing the video unless I saw the plastic beg which you used in foil paper.
I feel there should be alternative to the plastc beg for this.
Sir plastic releases some bad chemicals on heat which affects the food and our health it's better to heat them on a banana leaf or just foil
