    South African Here 😋- Traditionally, we serve Malva pudding with custard or ice cream. I would highly recommend the custard. It just gives a perfect balance ! Thank you for sharing this stunning recipe.

Something else you should try is koeksusters (cakesisters directly translated in English) as well as melktert (milktart) very delicious as very popular over here.

    It is winter in South Africa right now, so this is perfect timing. The vinegar balances the flavors, so the apricot jam is sweet/sour, then the vinegar balances the sugary sweetness. It's the same when we make curries in South Africa, balance the flavors by adding sugar, vinegar, and apricot jam. There is another version of Malva pudding in South Africa called "Vinegar pudding" It's made almost identical to Malva pudding but has ginger and nutmeg and much more vinegar, it is wonderful, try it in the winter months as well. Oh, and you can also use evaporated milk instead of heavy cream when you make sauces for Malva and Vinegar pudding, which gives a yummy caramel flavor. Also, we use white vinegar for all these recipes, Malva, Vinegar pudding and curries, I have never tried it with apple cider vinegar, but I'm curious and will try it next time.

    Greetings from South Africa ❤ traditionally Malva is a winter pudding but I love it so much , I adapted it for summer as well. I bake it in a round pie dish & make extra sauce pour over till it is drenched and put it in the fridge for a few hours. It makes the most delicious sliced tart served with cream or ice cream .

    The vinegar in the recipe acts with the baking soda and results in a fluffy pudding, and it also helps with the browning of the crust. This is the perfect pudding for winter here in South Africa which is now, but you will find this pudding on our tables right throughout the year seeing as it is such a easy and flavorful recipe to make and enjoy.       Agree, our family recipe is a lovely dark caramel colour. Cake flour is the best but my American daughter in law makes it with AP and it's still great. Custard cuts the sweetness and balances it. Ice cream is okay but too sweet for me. ❤ It's also referred to as Bruin Pudding (Brown) or Vinger pudding although you don't taste the vinger. Those are the older recipes that have been passed down in the family. ❤️

      Yes. She has used very little butter, hence the light colour. More the fat, more the browning.

    Maybe the vinegar reacts in the milk to make a fake buttermilk. That’s how I’ve always made buttermilk. Can’t wait to try this.

    Thanks for sharing, Gemma. As you say, Malva means "marshmallow" in Afrikaans (a Dutch dialect widely spoken in Southern Africa). It is given that name because of the sponginess of the pudding once the sauce is added and settled. The vinegar balances the flavours, and the acid helps aliven the bicarb. It's traditionally served with custard, depending on the region of South Africa where it is served. Custard is the standard because the pudding is extremely sweet as is. It is also served in some parts of the country with whipped cream, or ice-cream, as you've done it. As a tip, when making the sauce, replace some of the milk with Amarula Cream (a South African liqueur available all over the world now, with a distinct taste of the Marula fruit, or use Bailey's Irish Cream if you don't have Amarula). It's a game changer!!!! Alternately, add some brandy, whiskey, rum or Amarula into some whipped cream or custard to be served alongside the Malva Pudding. You can also add vanilla extract to the pudding mix. I have also known some restaurants to add lemon or orange zest to the pudding mix. The pudding is incredibly versatile, but, for me, plain is best, as you've showcased it.

    🇿🇦... Thank you Jemma for sharing this popular South African baked pudding with your international audience. Did you know that this bakes very well in ramekins? It also freezes well for up to 3 months... and the modern twist is to combine the Malva Puddig batter and bake it with a cheesecake!!! 🎉

    The bicarbonate with vinegar makes the pudding a little darker. Needed vinegar to work.

    Hello Gemma, South African here. Malva Pudding is real Afrikaans traditional pudding but eaten with gusto by all cultures in SA. The vinegar is to pair with the bicarb for rising. South Africans traditionally use white or grape vinegar. Apple cider vinegar is now gaining more popularity but unusual for baking.
    You can also research and present a Cape Brandy Pudding. Lovely!

    In my family when we do the sauce we do half and half white to brown sugar, gives a better balance of caramel without being too caramel but much tastier than just full white sugar. Love this recipe so much tho🥰

    South African baker here, the vinegar helps to tenderise the Malva. Traditionally, we use vinegar instead of other acids because it was always more affordable.

    Btw, this can be baked in the microwave too (for a much quicker dessert)... But I would suggest putting it under the grill for some colour.

    You have used too little butter in the batter, hence the light colour of the pudding. Also the pouring sauce should be a little more thick and not so runny. Vinegar may be to aid in the leavening with the baking soda and also maybe balance the sweetness. I always omit the vinegar for fear of the vinegary odour and still my pudding comes out perfect.

    Looks very much like a British sponge pudding. Traditionally a British pudding would've been served with a wine sauce - this sauce with butter and sugar is the same, just without the wine. I bet adding wine to it, something like Madeira or sherry, would taste take this to the next level!

      Have never tried it with another flavor of jam, I think it will work with a similar flavor palate as apricot. What did you have in mind?

      Technically, substitution is possible. But it will not be a Malva pudding as the jam contributes to the signature flavor of the cake.

    The vinegar takes away the raising agent taste.when you make scons or anything that has a lot of raising agent- baking powder- you put in a teaspoon vinegar or 🍋 n juice. Baking powder leaves a bitter taste.so my Grandma thought me to always put it in

    Malva is from Malvasia not marsmallow
