I have been dehydrating eggs for years. My process is a bit different, but still produces quality dehydrated eggs. When using them for baking, you can just add the eggs to your dry ingredients and add a bit extra liquid. Usually I add about 2 tablespoons of liquid per 1 tablespoon of egg powder. If you are using to make scrambled eggs, rehydrate, then add a bit of milk or cream and your spices. You can hardly tell they were dehydrated. Great video guys.

Yep i would never have thought of dehydrating eggs. This is pretty cool way to store eggs long term, especially for winter when your chickens might not produce as much. Great job yall.
Thank you so much for sharing this. I recently paid a small fortune for long term storage eggs right before the pandemic began. Who knew?! But after seeing this.... I will now do my own for my working pantry when I see them go on sale.

You mentioned having trouble cooking scrambled eggs in Cast iron. I would suggest that your cast iron skillet: either isn't seasoned enough; or, if one of later model Lodges, etc. that come preseasoned. They actually have a little rougher surface because of auto seasoning process. Mine are old, Well seasoned, slick as ice, eggs will slide around in the skillet.

Thanks for the tips, Gary! I’m learning that about cast iron. I’ve had to remove the factory seasoning from the newer Lodge pieces that I have because it just wants to flake off. I have some older pieces that are pretty slick.

It sure would. Unfortunately, our inexpensive dehydrators are set to one temp with no display. Never thought to check it with a thermometer. Thanks for the idea.

I do the float test with all my eggs. I buy store eggs.. I have at least 2 bad eggs per dozen lately.. ugh .. Hope you had a wonderful Thanksgiving & a Good weekend.. Big hugs

Yes. Store it in a cool dark pantry. As long as the seal remains unbroken it should last several years.

Yes you can use store bought eggs also. I’ve been using the dried eggs for a while and no issues. Freezing the dried eggs ensures no germs and no remaining moisture
What size Desiccant packet did you use for a pint?
We have 0.5g desiccant packs. We place 2 of them in a pint

We know what it is but haven’t done it. This method stores in so much less space.
I've heard dehydrating is a much better method.

When using your eggs in baking do you still place them in cold water before apply them to the recipe???
Floating them is a good indicator of how fresh they are. We always break eggs in a small bowl one at a time just in case we come across one that’s spoiled.

My dehydrator does not have fruit leather trays and it an open weave plastic. Do you think I could dehydrate eggs on a lipped cookie sheet on top of the racks instead? Hoping you will answer yes! My hens are in top laying form and I just don't want to make more pickled eggs and I'd have to start another 5 gallon bucket to water bath more! Yikes!
It’s worth a shot. I assume you have a square tray dehydrator. We found some silicone cinnamon bun trays that are working pretty well in our Magic Mill.

How long can we store them?
The enemies of canned foods are heat, light, moisture, and pests. It greatly depends on these factors. We have some stored for well over a year now and they are just as good as the day we packed them.
Get a huge stainless steal bowl. They are awesome
