i am floored by the professionalism in the lady chef (apologies, i don't know her name), the attention to detail in the presentation of the food, and the thoroughness of going through all steps and throwing in advice and the occasional trivia tidbit or two. i love these videos, thank you for posting.

Onigiri is such a wonderful food. So easy to make and you can put so many things in it. This brings back so many good memories. I want to go back to Japan SOOOO badly. Fantastic news about Chef! Very glad to hear she is doing so well and looking forward to her return to teaching me how to make delicious food.

The tuna mayo onigori would be a great one to start with since it doesn't involve any cooking aside from measuring the ingredients for the rice. My 4 year old niece has been cooking with mom for 2 years now and can put together a pizza (with pre-made dough ball) with simple supervision. It's all about getting them involved in the simple steps, having patience, and encouraging their input.

I like to imagine the host Francis is telling her how to make the food HE wants,
she only tastes a little, the rest Francis eats off-set.

I had a huge smile on my face when I read chef got to see Frances. I'm so glad you got to go home, when your recovering from a major medical issue and can't go home, your home stars to represent much more than your "castle" "temple" being able to visit can give you hope and motivation. We often forget how much the basic simple things really mean. I have been where you are Chef, you're a fighter and I promise you will once again find the peace in the simple thing, especially cooking We miss U

I really really love onigiri. It's so hard to find here in Canada, but sometimes at conventions they sell them. I've had the tuna mayo and an onigiri with mushrooms. I once tried to make the salmon kind but it didn't look so good. Even though it tasted fine. Thank you for showing us so many new onigiri!

It doesnt seem that hard to make, do you have difficult finding ingredients over there?
I would make mine right now, but im close to christmas and im saving some space for my fillings 😏🦃

"On January 15th, Chef sustained serious injuries while riding her bicycle in the suburbs of Tokyo. She was rushed to the ICU by helicopter."
but the latest update said: "Chef was able to meet Francis and stay at home for one day after getting permission to leave the hospital. She and her family enjoyed a sushi party and Chef went back to the hospital the next day. She was very happy since it was her first time to meet Francis after the accident."

I've tried making onigiri multiple times and i've really become a fan of them, including these excellent recipes and "inventing" a few of my own toppings... It's a very good dish to get creative and experiment with...
It's amazingly cheap and easy to make and very filling... Just after 1 or 2 of these, and you're full :D
Another good filling is taking a piece of skinned salmon and frying it along with 50 ml soy sauce, 1-2 tablespoons of soy sauce, 1-2 tablespoons of mirin and a small cluster of enoki mushrooms. Adding a small handful of finely chopped spring onion at the end gives it that extra oomph and crunch :)
