Keto Monte Cristo Stuffed Waffle | Stuffler

- Ever heard of a Monte Cristo sandwich or maybe wondering what it is? It is only the best ham & turkey sandwich! This sandwich is basically ham, turkey, cheese, mustard and mayo dipped in egg and fried like French toast. In this version I have included vanilla extract, mayo and cinnamon to the waffle mixture and stuffed with the meats and cheese. waffleized it and topped with stevia confectioners sugar - served with the Good Good brand raspberry preserves.
Okay, now for the ingredients:
Waffle batter:
2 large eggs
2 tbs ground pork rinds (or 2 tbs almond flour)
1 tsp vanilla extract
1/4 tsp baking powder
1 tbs mayo (we use Primal Kitchen avocado mayo)
1/2 tsp cinnamon
The STUFF (inside)
mustard (however much you like-we just eyeball it)
2 slices hickory smoked ham
2 slices hickory smoked turkey
Time to waffilize! Pour half the waffle mixture into the stuffed waffle maker, add mustard, cheese, meats, cheese, more mustard - then top with the remaining waffle batter.
Close stuffed waffle maker and flip!
Cook for 7 minutes and TA-DA! Yumminess awaits you! 🧡
To top it off
1 tbs Swerve confectioners sugar (powdered sugar)
1 tbs The Good Good raspberry preserves (good with strawberry & grape too!)
This stuffler sandwich alone is only about 4 total carbs
When adding the toppings it still brings this VERY FILLING meal to about 14 total carbs
You can adjust your total carbs by omitting the toppings or cutting them in half

I like Wendy from loving it on keto recipes for the Stuffler’s she uses keto chow soup bases . I tried it and man it’s amazing it amazing. She uses four eggs 2 tablespoons of softened cream cheese a package of soup mix and 1 tablespoon of water. She pours 1/3 cup in the Stuffler and then fills it and then topped it with 1/3 cup of batter. I made a pizza one and a taco one. I really prefer the tomato over the taco soup base for some reason it just taste better
