I had almost none - maybe a little but it wasn't even noticeable and they clean the entire beach every morning. I'm not sure if there is a specific season for the seaweed, but when I was there in late February it was perfect.
When I went we asked the front desk and they had a list of what each night's themes would be at each buffet. You may be able to email them and find out the current schedule.
I don't think they have a coffee shop at the resort but every one of the buffets and beach grills were able to make coffees/lattes/iced coffees if you ask. I think some of the lobby bars can get you a regular coffee but I don't know if they can make fancier coffee drinks.
Most people would tip their servers at the buffets and restaurants. The amounts vary a lot depending on the person but usually 50-100 pesos per person.
Pretty much everything I saw behind the bars were either well-known international or Mexican brands. Some of the international stuff was considered "premium" and was extra (or free if you were in a premium room).
I think every restaurant and buffet had a few vegetarian options. I've heard they are very good with diets and allergies, so you could probably get them to make meat-free versions of some of their dishes.
The big main buffets had taco stations everytime I went, but the beach grills only had tortillas that you could make your own with stuff in the buffet.
I love your videos I saw there was a ADO bus stop at Playa del Carmen are u familiar with anyone who took their bus to or from the airport...I heard u can take the bus to Playa then get a taxi to resort..how much is a taxi from Playa to Barcelo..
I haven't done it myself but the ADO bus station is right along 5th Avenue in Playa del Carmen (the main very touristy road). The price of the taxi will depend on the taxi driver and how good you are at negotiating. Most of them start with prices around $30-35 USD but I was able to get them down to around $20 USD (if you don't mind trying a few). So depending on the price for a taxi + bus ticket, it could be close to the price for a car service to pick you up at the airport (unless you can get a good taxi price).

Would booking the Barcelo Maya Palace include access to the a la carte restaurants for each night of the trip?
Usually with Palace and Riviera you get a la carte dinners every night (if you want).
