Check out the "snake" method for smoking. It's normally associated with the round Weber grills, but I think it could be used in the kickoff grill as well.

It wasn't spicy. I needed to add more than a teaspoon on Cayenne or pepper flakes to get it to the spice level that I like. It just had a very good flavor too it but not spicy. Thanks for watching.
I did know Lodge cast iron made grills. I love cooking in my cast iron skillet. I imagine being cooked on a cast iron grill is the best and like your husband said he is the luckiest guy alive. 🤣 He is cracking me up shouldn't be wasted on skinny people.

The kickoff grill seems like a pain in the rear to use. Because you can't add more charcoal or wood, without removing the entire grill portion. But, you were smart to use your dutch oven as the lid. I think you should flip the entire workings around and try that. The dutch oven on bottom, the kickoff grill sat inside it. Then the vented lid on top. You'd still have to remove the kickoff grill to add charcoal and wood, but you food would NOT have a chance to spill off. Then you can toss in more charcoal and wood inside the dutch oven. It would work more like a barrel smoker or Tandor oven.

@@BobbiJo But I don't taste mustard. Do you? We brush a little cooking oil on our ribs, then add a dry rub for flavor. I think if the mustard is just a binder for dry rub, you could use mayonaise for some added fat & possobly better flavor?
