    Just planted swiss chard and turips. I love all greens but have to try sweet potato greens!

    I also love sweet potato greens - your the first person that I've seen freezing them. I will certainly do that next year. When you cook the stem pieces, do you use fat in pan then stir.fry them for a side dish? When I cook turnips, I usually cut the stems thinly and fry with the leaves in bacon fat. So good! Do you eat chard leaves cold like a spinach salad or only cooked? Lots of good info today - thanks!

      I dehydrate the sweet potato leaves for soup mostly, I cook turnip greens just like you do! Swiss Chard is my favorite green. We eat them raw in salad, on sandwiches and steamed too like spinach.

    Just something to consider
    Some people who have a latex allergy are said to possibly react to sweet potato vine. Not sure about the potato itself…
    Supposedly has to do with a protein that is similar enough that the body gets triggered.

      That makes sense - the vines contain a white latex sap as do figs and dandelions (and I did mention that). I'll have to trust that people will know about their own allergies. Milk allergies are common too but I'm not going to talk about them in a yogurt video. :)

    how do you use the dehydrated sweet potatoes ?

      I had the leaves to soup, casseroles, & stew. I also rumble them up and use them as a garnish, or with other herbs as a flavoring. ( I dehydrate all my carrot tops too!)

    How long in the dehydrator and what temp?

      I do everything I can at 95 to 114 - and the time depends on too many factors to guess - temp, humidity in the air, type of machine - even the drying rack type -- so dry until they are crispy and crumble easily.
