When opening up the clay on the wheel and lifting the walls of your piece, always have both your hands touching each other in some way so that they move together, helps with consistent pressure and gives you more control. Thumbs are good anchors. Also, to correct uneven tops you can cut off the very brim of a piece with a sharp poke-y tool, inserted perpendicularly to the outside walls while it's spinning slowly and then clean up the edge so it's smooth.
