You have to try smoked eggs! They make amazing deviled eggs and egg salad. In the states someone has actually started a business selling cold smoked eggs. They use them for recipes like baking. And cold smoked Swiss and cheddar taste awesome. 😊😊😊😊😊

I haven't watched the video yet, so I'm commenting this before the video finishes, but I always coat the blueberries in flour so that they don't rise to the top of the batter and stay evenly dispersed.
Next time, toss your berries in a little corn starch. It will keep the berries from sinking to the bottom.
OH YUM, WARM BLUEBERRY WITH A PAT OF BUTTER.
Not just any butter, some Kerrygold Irish butter!
They're SO good with butter - when they're just cooled a tiny bit so you don't burn your tongue.
And don't worry if they're lumpy and bumpy and irregular. That's their nature.
As far as the oil - my mom always used a neutral vegetable oil. People vary that a lot to suit their preferences.
A bit of lemon in the blueberry muffins is good too.
If you prefer butter for your batter you can always sub the oil out for melted butter
Oil is usually preferred to keep the muffins full of moisture but, when I want a bit more buttery flavor, I'll do half butter & half oil. Also, if you make sure to add vanilla extract, it helps with the oil taste.
So I usually will coat the blueberries with a little flour to help keep them from floating to the top of the batter. But also if it's oily you can always substitute oil for applesauce. It keeps it moist without all the oiliness.

Pro tip, very good suggestion.
My sister is an excellent baker. She swears by melted butter instead of oil when she makes baked goods; muffins, brownies, cookies, etc. Butter keeps things from drying out as well.
I think that would work well. I'm with Mrs. H on that - I can sometimes taste a bit of vegetable oil in baked goods. I'll definitely still eat them, but a nice butter flavor sounds better.
if its something sweet, you should go the extra step of browning your butter, especially for chocolate chip cookies. brown the butter and always... ALWAYS refrigerate your dough for at least 24 hours. Chocolate chip cookies are epic when the dough has a chance to properly sit and let the flavors blend.
Yes butter would work. I use applesauce in place of oil also.
My spouse is a fantastic baker and she ALWAYS uses melted butter instead of oil. She also uses a mixture of butter, cinnamon, & sugar to use as the streusel topping.
I like to put butter right on the split muffins. Melts in and yum!

i put a slice in the top of the muffin and slide a pat of butter right down into it and let it melt into the inside of the muffin.

Lemon-blueberry and orange-cranberry are my two favorite muffin flavors.
Elana has grown so much! It was really neat hearing her talking and discussing the muffins. Such a beautiful girl!
Streusel is German, and you said it perfectly!
Basic muffins
1 3/4 cups all purpose flour
1/4 cups sugar
2 teaspoons baking powder
1/2 teaspoons salt
1 beaten egg
3/4 cup milk
1/3 cup cooking oil
To this can be added any variety of fruits, nuts or flavoring.
Adjust sugar to taste.
For blueberry add a bit of sugar.
For banana reduce milk to 1/2 cup.
For Apple include some cinnamon.
Hard fruits and nuts should not require much adjustment.
Fruits that you expect to release much water require less milk.
Lemon zest goes great with blueberry.
You can substitute margarine or butter for part of the oil. If the butter is salted take that into account. Our ancestors on the frontier used animal fats. So did yours.
Fold the batter gently.
Don't beat it to death.
And egg sizes in BAKING are generally Large sized.
And when making Steusil, get a pastry cutter. It's SO MUCH EASIER!
Not a lot of people know this, but in the USA, January 28 is National Blueberry Pancake Day. This video coincidently posted here on January 28...and what is a pancake but a lighter, fluffier, flattened-out muffin.☺😋
Sprinkle that streusel mix on fresh blueberry pancakes with good real butter and real maple syrup with some sausage links would be amazing!!!

Don’t overstir the batter, just the bare minimum to mix the ingredients. You don’t want to develop the gluten, which will lead to tough muffins. Streusel topping is crack! A potato masher is a great streusel masher, add oats and chopped nuts for yumminess.

A little lemon really makes the blueberry 🫐 tartness come through if you want a less forward sweet profile. Blueberries in Lemonade 🍋 also really makes it a great drink.

You can always use applesauce instead of oil in cake/muffin recipes. Stays nice and moist, and gets rid of that oily taste/feeling. It’s 1:1 substitution. Can fully replace the oil, or do part applesauce/part oil.

You can always substitute applesauce for the oil in baking. It makes it very moist and much healthier than oil!
Cupcakes are bad for you, but if you lick all the icing off a cupcake, you have a muffin, and muffins are good for you.

Once I went to make muffins and the family had eaten all the blueberries in their oatmeal that morning. I love blueberry muffins with streusel- said perfectly- and I always add a little lemon zest. (Grandma always said lemon with blueberries, almond with cherries. But she put Grand Marnier in her French toast and cayenne in her peaches.
Mrs. H I must say, you would make an excellent Southern cook, (even though mufins are universal) you can tell you really enjoy putting your all into your dishes and they turn out great! You two both have a much better grasp on American cooking than most of the foreign reactors/creators with American related content. hats off y'all!
Also, you can replace oil in the recipe with either apple sauce or even sour cream in anequal amount you would the oil. I make blueberry muffins like a blueberry cheesecake & bake. Just take your recipe and coarse small cube a 1\2 cup of cream cheese and throw in your mix stir just enough the tiny cubes are distributed similar to the berries in the batter then pour in your muffin cups/tin bake at same time & temp. Add your streusel or leave it off depending how luxe you wish to be.
u can make muffins using butter. which myself i prefer cause of the added flavor
The muffins look wonderful. The thicker batter was spot on for a muffin batter. I recommend you use melted butter in lieu of oil and keep the liquid at one cup. Elana has a piece of my heart ❤

If not already mentioned below, the blueberries need to be mixed separately with a little flour(coating) so that they do not sink to the bottom of the muffins. But they look yummy.
Mmm that's my favorite muffin too. My mom would make me blueberry mini-muffins when I was a kid. It was the greatest smell to wake up to on a Saturday morning.

I make blueberry muffins all the time, but even better are blackberry muffins, and the last batch I replaced blueberries with a can of apple pie filling as an experiment, turned out great!
Never had, or heard of, blackberry muffins but now want some......always loved blackberry anything

I always use vanilla and cinnamon in my blueberry muffins. Lemon zest pairs very well with blueberries for another variation. Those look amazing Mrs. H! 😋

It does take patience, though. Elaina’s verbal skills are amazing for her age. Only just turned three…incredible. Do you think that preschool contributed to that? My grandma called me a talking machine when I was little. She was right I imagine because I still am.

I pick huckleberries every late summer. They are in the same family. I use mine in pancakes, so good with an egg on top. I will try them in muffins. Have a wonderful day. From southern Oregon.

I love to make blueberry bran muffins. 💙 I found the recipe on the Cook’s Illustrated website. It uses All Bran, wheat & all purpose flour, eggs, light brown sugar, molasses, vanilla extract, melted butter, whole milk yogurt, baking soda & salt, and blueberries 🫐 of course.

Oh, that sounds delicious! I love bran muffins, so with the blueberry added they would be even better. Most people ruin bran muffins by putting raisins in them. Ugh!! That is sacrilege!

I never thought I would watch someone make muffins since I haven't had one in years. Still I like watching your videos, they are entertaining in their own way. I don't know if it really makes a difference or not, but my Grandma taught me to coat berries with sugar (and to cut Blueberries in half) to help stop them from sinking to the bottom. She taught me to rinse the berries, coat them with sugar while they are still slightly wet, and to fold them in to the batter carefully as to not knock off too much sugar.
I coat them in flour, but sugar might work too!
When baking, I usually replace oil with cooled melted butter. Butter makes everything better.
They look perfect some whipped salted butter would be great to spread on them.
I love blueberry muffins when I was in College in San Francisco there was a Cafe across the street from my apartment that made the best pastries I love a sugary crispy top and soft semi sweet muffin, their coffee was roasted in house and was the best, when fresh brewed. The Cafe turned into a night club in the evening and had huge billboard style Flat-screen out front I could look out my window and have hours of entertainment. Sorry for reminiscing. 😂

A good combination with blueberries is adding some lemon extract and lemon zest to the batter. I don't know if I missed it. Did you add some vanilla extract to the batter? If you didn't, that could be why you could taste the oil. Most baked quick breads wether muffins or loaf will have vanilla extract in them no matter the flavor. So could be chocolate, orange, lemon to vanilla. From a 1/2 teaspoon to enhance the main flavor to 2 teaspoons of vanilla if that is the dominant flavor you want.
Us milk labels are red(whole milk)/blue (2%)/pink(skim milk) in gallons,1/2gallons/pints
And green is buttermilk.

The shelter is a great idea. You get so much rain that it is difficult to maintain a constant temperature in the Beast. Putting it under a shelter will fix that problem.

If you don't want to use oil, you can use melted butter in both the batter and the crumb mixture. If you sit the crumb mixture in the refrigerator for a while before topping them, it will spread evenly across the top.

One thing we have learned, is everything is better if the whole family participates in making it. Whether it is Chicken Cacciatori on ribbon noddles, or a Pot Roast, or Beef or Chicken Stew, there are far less complaints and far more 10 out of 10s.
I love blueberry muffins. And Mrs. H can come bake for me anytime. I would probably need to knock all the cobwebs out of the kitchen & fumigate first. Orange-Cranberry muffins are another fave. In the US there is no particular color for any of the milk. You have to read here. There are a few tips for these. A bit of lemon juice and/or lemon zest. Swap some oil for butter. Wild blueberries always seem better to me. But the cultivated type is fine too. A dash of rum or brandy. Errr skip that. Too many to list here. You said streusel fine. Good JOB!!

I’ve never made blueberry muffins on my own, but I used to go to a corner store where the owner also would bake fresh muffins and desserts and I vividly remember she would top the muffins with caramelized sugar and the middle of the muffin would have some blueberry preserve inside. With that being said, y’all’s recipe looks great
Whole milk is red, 2% is blue, and green depending on the state and company is buttermilk.
