Mmmm. I sliced up a chuck roast and salted the slices then put them in a dehydrator. They were thicker slices and I don't completely dry them out, 4-5 hours. Delicious. I will try this as well. Only problem I have is I can't stop eating it. So good.

I've been carnivore for about a year and a half and have attempted to make similar meat chips, jerky etc so many times. Every time, for some reason, the meat gives me terrible diarrhea. I've tried different variations on salt, curing salt, drying temperatures and times, making sure refrigerate it and to eat it soon after drying to avoid spoilage. Doesn't matter. What's more, I've learned I can't eat deli meats, especially things like salami. I think I might have a histamine intolerance, but it must not be too bad because I tolerate typical aged beef from grocery stores with no problems. Oddly, as for having some sort of portable food, I've started making pemmican, which I have no issues with. It's really strange, but I do like pemmican and it has a great fat to protein ratio. Hope this helps someone. Also let me know if you have similar experiences with preserved meats.
I had serious issues digesting any beef until I started taking BodyBio Pure Phospholipid Complex. I literally tried all the recommended supplements, I have no idea why this worked, I wasn't even taking it for that 😂 but low and behold I was in a situation, a week after I started taking it, where I had to eat beef and my stomach had zero issues. I worked my way up to 1 tbs, I don't recommend this to anyone, this is WAY above the recommended dose on the bottle, but I did it bc that's what was recommended to me. Still pemmican is really good too!

Since on the carnivore diet diet you eat hardly any fiber so in a way it’s not surprising. Everything I’ve been reading about the carnivore has said that it gives you really bad diarrhea unless you take vitamins and other supplements to give you what you lack in the carnivore diet.

Have you tried a salt water bath brine? I bet you will love it.
Cook it on the grill or thow it in the microwave for 20 sec. It changes the flavor completely

I use the exact same recipe! One thing I noticed is that the fat tastes quite different and worse when the meat was stored vacuumed in the fridge. I would recommend asking your butcher if it was stored like that or not.
Powered salt is just ground up salt. No need to buy. Just like powdered sugar. Just put some in your blender until it turns to powder. You’re welcome

Seem to be able to get super thin slices w/a manual slicer I picked up for $26 on Amazon~ after much research, I should add. I did consider an electric one, but I've learned a lot from the butchers & meat dept.'s I've had slice for me over the years~ mainly, they're unpredictable & not as easy to adjust the thickness. We like ours almost see through.

thanks for showing, I just got interested in making my own jerky recently, didn't do any research yet, so there are machines like dehydrators that makes it super easy to make, cool!

I wish someone in the carnivore community would do this recipe in the oven and using an air fryer. Not everyone can afford all the gadgets.
I get dried beef like this from my local butcher. Dried with some spices we call it Biltong.

Of course!! The meat I used is called brisket. I sliced them as thin as I could go with my meat slicer. :) I don't know the exact grade sorry!

Usually here in the US we really trim the FAT off so the meat will not go rasid... How long will the meat last with this much fat?

I love that you left on the FAT, but I have been making Beef Jerky and was always told to TRIM off ALL fat because it will go rancid.

I have a cosori and do mine at 165 for 4 hours
I also have a cosori. I normally uses regular cuts of beef for traditional jerky. Will 165 for 4 hours make it crispy for thin cuts?

i've notice you're using redmond's real salt, pay attention to lab results that found it's very high with heavy metals. i too looked for alternatives, there's maldon and several other brands that have very low or no heavy metals in lab results. look it up. take care
