This recipe was developed for the Home Bakery Virtuoso® (BB-PAC20) and Home Bakery Supreme® Breadmaker (BB-CEC20). Adjustments may be required for baking this bread in other models of the Home Bakery.
I tried this recipe tonight except I basically cut it in half and tweaked the cycles for a small loaf (Homemade course). I also threw in an egg. It came out great! It smelled so good when baking. The smaller loaf is better suited for sandwich use, BTW.

Denise, you will really love it! I use mine 4 times a week at least! I also make the dough for my cinnamon rolls and coffee cake in it....its so easy throw the ingredients in set dough cycle and I have a beautiful dough ready to roll out and fill with my fillings. It makes perfect bread every time! I also make a yummy English toast bread which my kids love to make their egg and sausage cheese "muffins" and spread my homemade jam on. You won't buy bread again! =)
***** I got it today! I spent an hour moving stuff all around so that it will stay on my counter so that I will use it several times a week. Even my daughter that lives up the street can't wait till I start making bread and that will be tomorrow. I'm going to use your recipe here for my first one. It looks like such a wonderful combo of the white and wheat flour. This is what I picked out for Christmas. I'll take something like this over jewelry any day. Actually my husband when to the jewelers and I told him no, no more jewelry. This break maker is something I will enjoy so much! Thanks for your videos!
Denise Thomas I'm anxious to hear how it turned out! A little tip...in video I show putting in water and then everything else on top....even easier you can put in your water ,butter, gluten, salt, honey/sugar,powdered milk...then add your flours..and make a little well in the center and put your yeast on top in the little well of flour. Enjoy!!!
I love my machine but its new to me. My bread crust on the bottom is thick the sides and top are perfect but way to crusty on the bottom. Am I doing something wrong?
+bluemarlinfish HI! Yes, it is dishwasher safe...but to be honest...I wouldn't put it in the dishwasher but just hand wash it. Its easy to wash quickly and dry.
Yes, I have put it in the dishwasher...but I would recommend that you just hand wash it. It actually cleans up very easily....all you have to do is fill the pan with some water...let it soak for a bit...and then the bread dough that baked on the metal mixers and at the bottom just soften and you can wash it easily. I hope this helps!
I have the same machine at home but the problem I have is the top never gets as brown as I like it even when I selected the dark crust option. Any tip is appreciated.
Zojirushi has an almost identical model looks-wise, but it does not have a heater in the lid like this one. Perhaps you have the other model? Perhaps brushing the top with butter or an egg wash would help brown it. IDK
Christine, I love my machine, but my bread comes out so huge and tall, I made the 100% whole wheat bread and it was a disaster, it must have weighted 5 lbs, so I then made half wheat and half bread and it turned out good, but still very tall, so I will try to make the one you made, just one question, I have whole wheat flour and bread flour, is that okay???? and will the 5 cups of flour make it smaller???? if not could you post a recipe for 1.5 loaf of bread. I love my zolirushi machine.
Hi Nicky! The recipe I posted is my favorite bread recipe. I make it all the time. You shouldn't have any issues with it rising too tall. It should work out great in your bread machine! I also just use regular flour instead of bread flour and it turns out perfect every time. You will like the bread! Its not heavy and has a beautiful texture. The white flour and wheat flour are a great combination! I agree with you ...I love my zojirushi bread machine too!!!! =) Enjoy!!
thank's christine, I have been using bread flour and 100% whole wheat, didn't know about using regular flour, will give that a try. thank's for responding back. Nicky
@@christinemonaghen3027 Oh Boy Christine did I mess up again, I was making your recipe and noticed that my all purpose flour was bleached, so not remembering last time, what I did, I used bread flour, my fault what a disaster. way too big and sort of hollow in the center, but I saved it and cut it and put it in the food processor for bread crumb's. so nothing wasted. now I will look at the regular flour, unbleached, I'm determined to make this. I have learned a lot about flour. and it does make a difference. so will let you know when I try again. like the recipe and my Zojirushi, best machine out there. thank's again.
Nicky Mullins, It wasn't just you. I made the 100% whole wheat recipe in the Zojirushi recipe book and I also got a dry brick. I'm trying this one today.
No . For the total amount of water, you can use 1/2 milk and half water, and it works great. Make sure you keep the TOTAL Liquid quantity the SAME.I have never used powdered milk and my bread comes out perfect each time by using 1/2 milk and 1/2 water .e.g. if you are using 450gm or ml water in a recipe, you will use 225 ml milk and 225 ml water. Hope this helps!
Yes, you can if you bake it right away. (Don't use time delay. The milk could go bad.) Replace water with equal amount of fresh milk and omit the powdered milk.
Hi Christine, used this recipe for yrs almost daily. Makes excellent bread. If you have tried cinnamon raisin bread on this machine, would you mind sharing as well. Thank you
Curious -- why not actually weigh ingredients? Much simpler, much less clean-up (just put breadmaker pan on scale, tare, add ingedient, tare, add next ingredient, etc.) and much, much more accurate than volume measurements.
Obviously she has mastered her technique in making bread with the Virtuoso - I don't see a reason for her to change...that bread turned out beautifully.
Funny, I was thinking the same thing...I just got the PDC20 Virtuoso Plus, and have been watching videos to help me....Zojirushi makes SUCH a fuss about precise measurement so can't believe that hers turns out SO well with "guessing measurements"!! Liked her tip about punching the dough to even it up on the second rise, to help with the shape...will try it next time!
thank you for sharing how easy this is. I will be buying this unit on Saturday and hopefully I can make Hot cross buns for Easter Sunday. Do you have a easy no fail recipe for Hot Cross buns
I picked up two Zojiirushi model BBCC 620 machines, $6 for one, $8 for the other, these are $200+ machines and are second to none. I look for thrift stores in either a retirement community, or a Humane society shop, I avoid S.A. and Goodw..., they sell junk that is way over priced. Be advised cockroaches do nest in these, so if in doubt bag it and squirt in a bit of roach spray, they will evacuate the machine in short order- same holds true for rice cookers, crock pots, microwaves, etc. The BB-PAC20 is a cosmetically updated version of the BBCC 620, with handles for the pan and a slightly different keyboard layout, but all the functions are the same, the microchip controller is the same too. I weigh my flour (bought a digital scale with the money saved) and made a custom self- leveling water container like as is used in a laboratory beaker, perfect results every time.
Issue: Gummy Areas within the loaf Too much sugar was used Too many wet ingredients (applesauce, eggs, fats, etc) If using a bread machine- the room was too cold, affecting the baking temperature of the loaf If you’ve double checked the ingredients and the room temperature and this keeps occurring, the Thermostat in bread machine may be defective.
Hi Christine! Great video! This was the clincher for me to get this bread machine. I was on the fence. A couple of questions (tried searching but too many answers). 1 - Can I use non-fat milk powder? 2 - What kind of gluten? I see gluten powder, wheat gluten flour, etc...but not just Gluten. Help!
Hi Cathy! YES ..you most definitely can use non-fat milk powder....I use it a lot especially if I want to have it make bread over night for fresh bread in the morning. As for the gluten...I do not know...I did read some comments below from people who had some gluten free recipes?
Thank You Christine. This was an excellent Instruction video and recipe. Used it from day one with my Zojirushi BB-PAC20 Home Bakery Virtuoso Bread Maker and absolutely love your recipe. Makes excellent bread which has become my family's favorite. Thanks to you, I bake easily 1-2 breads a day! The recipe with the machines did not work well for me. Would welcome any other similar bread , dinner roll, bagel or dough recipe that you would recommend, like whole wheat etc.? Thank you and I remain very grateful for all your help! God Bless!
I had to write it down also, I don't understand the water, the cup just has numbers and marks on it, so I'm not understanding why it can't be measured by cup's.
Please do NOT have your flour in a plain glass canister. The large space takes in air from your kitchen and stores it with your flour. Kitchens tend to be fairly moist spaces so the flour is degrading ALL THE TIME. I guess if you are doing high volume baking, it may not affect it that much but you are taking chances. Much better to use flour bins with SEALING capacity, either rubber or silicone (the better long term option). I've even used silicone CAULKING in a thin line around glass canisters to keep air from sneaking in (with lots of unacceptable flavors like garlic/onion, etc.) so that the flour stays freshest. Also, getting a roomier version canister will give you a FLUFFING space. A small whisk can add a bit of air and break up clumps so that you get accurate VOLUME measurement. IF you are using a scale (much better) then the fluffing isn't needed. Added GLUTEN ("vital gluten") encourages strength and elasticity. That makes the bread stretchy and holds it together. Think of pulling apart a slice of bread vs a piece of cake. Gluten is BAD for cake; GREAT for bread. BREAD flour already has a higher level of gluten making it unnecessary for a plain white bread. However, adding whole wheat flour (or even 100%) will be a denser loaf that will really come out tougher. If you like the flavor of whole wheat, consider getting a flour mill. Fresh ground whole wheat especially with added vital gluten is LIKE BREAD DESSERT!! YUM! Finally, DO NOT cut bread until it is cooled! The moisture gets more evenly distributed as the excess moisture (a tiny amount) leaves the loaf. Cutting it while it is steaming releases a WHOLE LOT OF MOISTURE and you can see it in the picture. Note the rubbery little bits of bread in the slice and the cut surface of the loaf. Once this is finally cooled, they will be stale little tough bits. Don't discard, of course. If you were feeding frenzied little ones and commit the sin of premature cutting, just use the rest of it for toast. The lesser moisture will make it crispier! Love my top rated Zojirushi bread baker. LOVELY bread!
450 is actually quite a lot of water to use in these recipes. I usually use the basic white recipe which only calls for 320mls (or 1-1/3 cups) water. Maybe try using bread flour? Bread flour has a higher gluten content than all purpose and gluten is what makes bread nice and soft and not dry. Also, I use a little bit more butter than the recipe calls for.
Please tell me how many cups is 450mls, glad you cleared up the 320mls.thank's hope you reply, I can't seem to find it anywhere and can't figure out why water is measured that way.
I just noticed you listed white bread flour but I thought you used regular flour and that is why you added the vital wheat gluten. I am confused .Am I missing something. LOL I have just always used bread flour in my bread machines but I am trying to get away with doing that.
Hi! Sorry, yes recipe says white bread flour...but I personally use just regular unbleached flour for all of my breads. In video I did just use regular unbleached flour. Your bread should turn out delicious!! =)
I made this recipe last night. The bread came out huge - delicious but huge. Was so big it flowed over the edge of the pan and became difficult to dislodge. Just viewed the video again to be sure I had the right amounts of ingredients. I did - and I have the same machine. Disappointed.
Diane Dobbins I agree the loaf is tall at the crow. but it never flowed over the side for me. I used her gram measures recipe with a scale. I also used bread machine flour and bread machine yeast. Use a scale and use the exact amount of yeast in her written recipe. I get perfect results each time. Granted, I have the BB-PDC20 model however I doubt that had anything to do with it.
I tried your recipe today and did not again have a good result with my machine. The top of the bread stuck to the top of my machine and then the bread sorta caved in the middle after it stuck to the lid of the machine. What a mess to get it out. I have tried several different recipes and nothing has worked out. Like I said in another post I have had $40.00 machines that baked great bread, I am not impressed with this machine.
you got a lopsided loaf of bread because your paddles were not aligned. When you place your paddles into the machine, ensure they are orientated in the same direction, this will give you an even loaf. You forgot to show us the recipe at the end of the video! :)
Dennis Baril I'm not super exact in my measurements and my bread comes out perfect. With some stuff I don't even measure. Like, I don't measure the butter or the honey (if I add honey). I always make sure the water, flour and yeast are exact measurements though.
It doesn't matter anyway, as long as the yeast don't touch the salt or water just put it in the center, of the flour. the bread is sssssssooooooo high, you have to cut the bread in half to make a sandwich or a piece of toast. so I'm back to my breadman ultimate. I paid way too much for the machine, will give it to one of the children and let them suffer.
I used half and half also, it turned out good. I don't understand the 3 cup's, look's like it would raise the top up, the half and half comes up to the top.
Frodosonic It’s Nov 2018 and I just got a bread machine. There was a glitch in her video when she said the measurement of the whole wheat flour. If I was making bread I would’ve put 2 cups also. Thanks for your comment.
Nicky Mullins - I used the 3 cups of wheat and you’re right. It made a huge loaf of bread. Delicious but so big it stuck to the edge of the pan and the handles. Next time I’ll do just 2 and 2

Thanks and Recommended for all
If there is overhang on the sides, what did I do wrong? Just made my first loaf
Thank you. My machine will be coming Monday. Thank you for the video. I'm so excited.
Enjoy!!!
Denise Thomas
Hi. It’s Nov 2018. Are you still using your bread machine?
I love my machine but its new to me. My bread crust on the bottom is thick the sides and top are perfect but way to crusty on the bottom. Am I doing something wrong?
how do you clean the pan? is it dishwasher safe?
+bluemarlinfish HI! Yes, it is dishwasher safe...but to be honest...I wouldn't put it in the dishwasher but just hand wash it. Its easy to wash quickly and dry.
Yes, I have put it in the dishwasher...but I would recommend that you just hand wash it. It actually cleans up very easily....all you have to do is fill the pan with some water...let it soak for a bit...and then the bread dough that baked on the metal mixers and at the bottom just soften and you can wash it easily. I hope this helps!
No, Don't wash it in the dishwasher. It Isn't that hard to handwash.
I just used a washcloth and wipe the bread pan to remove any bread residue.
Do you necessarily have to use powdered milk? Could you use reg milk? I'm brand new to this.
Where did you buy your Zojirushi? I'm want to get one but I don't know where to and get a good price. HELP! Thank you.
King arthur flour has the breadmaker in stock....looks like they are sold out in a lot of stores otherwise. Good luck! You will love it!
How big are the flour jars?
Thank you for the video!!!
Hi Christine, used this recipe for yrs almost daily. Makes excellent bread. If you have tried cinnamon raisin bread on this machine, would you mind sharing as well. Thank you
Absolutely delicious, it was my favorite. But I cheated, I put the raisins in when it started mixing, wonderful.
Curious -- why not actually weigh ingredients? Much simpler, much less clean-up (just put breadmaker pan on scale, tare, add ingedient, tare, add next ingredient, etc.) and much, much more accurate than volume measurements.
thats what i do to so simple and so much less clean up.
Obviously she has mastered her technique in making bread with the Virtuoso - I don't see a reason for her to change...that bread turned out beautifully.
That is best, but her loaves look OK the way she measures. Sometimes I think I am too fussy about measuring.
How long does it take to start after rest
thank you for sharing how easy this is. I will be buying this unit on Saturday and hopefully I can make Hot cross buns for Easter Sunday. Do you have a easy no fail recipe for Hot Cross buns
great review thank you! Do you still like your machine now?
Great recipe, thanks!
Very nice video.
Bread gets hard to fast and can't eat, any tips?
Have exact machine, followed your recipe to the letter. It rose too much and flopped . It was a little gummy. Can you tell me what went wrong
Issue: Gummy Areas within the loaf
Too much sugar was used
Too many wet ingredients (applesauce,eggs,fats,etc)
If using a bread machine- the room was too cold, affecting the baking temperature of the loaf
If you’ve double checked the ingredients and the room temperature and this keeps occurring, the Thermostat in bread machine may be defective.
I found this...I hope this helps =)
Nice video. Thank you for sharing.
You said 2 cups wheat flour but added 3 cups?
It is 3 cups of whole wheat flour....the recipe is posted above for you =) Enjoy the bread its a great recipe!!
I get Honeyville Farms Vital Wheat Gluten. I order it off of Amazon.
OMG!! I am so sold!! I'm ordering me one today!! Fur sure!! yes!!!
Good luck! The Zojirushi BB-PAC20 actually is one of the best machine in the market. Hopes it will work for you :)
Nice video. Thanks!
God Bless!
+N Happy Thank you! =)
so where is the recipe????? I don't see any link's. guess I will have to write it down, just don't understand the 5 cups of flour
I had to write it down also, I don't understand the water, the cup just has numbers and marks on it, so I'm not understanding why it can't be measured by cup's.
I have a 1 pound machine can i just straight halve the ingredientsm
you need to make sure your paddles are lined up the same way and the bread will be even .
LOVELY bread!
why so bitchy?
@Trish Fitzpatrick Lots of valuable info. Thank you!
Can you do Croissants dough ?
They do have a good recipe for croissant dough...and shows you how to layer the butter.
Wow it is like Texas toast.
It would be better if you write the ingredients in the description.. thanks 🙏
450 grams of water is not enough, I found it dry, what did I do wrong?
450 is actually quite a lot of water to use in these recipes. I usually use the basic white recipe which only calls for 320mls (or 1-1/3 cups) water. Maybe try using bread flour? Bread flour has a higher gluten content than all purpose and gluten is what makes bread nice and soft and not dry. Also, I use a little bit more butter than the recipe calls for.
Please tell me how many cups is 450mls, glad you cleared up the 320mls.thank's hope you reply, I can't seem to find it anywhere and can't figure out why water is measured that way.
Excellent video... thanks.
Cool! I love this machine!!!!
I never smooth mine out and it always comes out even. In fact, I never even open the lid again until it's through. Maybe your paddles are out of sync?
Susan Crowe or maybe it's the altitude....or perhaps the fact that she's even tampering with it at all lol
That is so true. I learned that on another video. I keep the paddles aligned and that works like a charm every time.
@@christinemonaghen3027 Thank you for your reply.
Why put more gluten when backing a bread? I don't.
I put the recipe in my comments. Thank you
thought you had to be more exact in your measurements ....
You should weight your flours! Your scoops were too big!
I wish i saw the comments before. I put 2 cups of whole wheat instead of 3 !!! Just wasted a batch i guess... So much for the "half and half"...
I used half and half also, it turned out good. I don't understand the 3 cup's, look's like it would raise the top up, the half and half comes up to the top.
Frodosonic
It’s Nov 2018 and I just got a bread machine.
Next time I’ll do just 2 and 2
Гениально!
mm mm mm Honey!
