It is indeed life changing to become a canner! Thank you for your encouragement to all who watch your video. Love having this recipe on my shelf - one of my favorites because of the versatility - so many ways to use it. Variety prevents food fatigue!
I can completely associate with what you are saying on why you can. I have gardened for years and only so much can go int those freezers. When half the freezer is packed with tomatoes for sauce and other produce that I could have packed gets sent to friends, it's a bummer when the freezer becomes half empty after making that sauce. I finally started canning a year and half ago and wish I would have done it so much sooner. I go downstairs to my little "store" and grab a couple things from the freezer ( i prefer frozen beans to canned) and jars of this and that and magically have great soup without hours - or preservatives. The price of everything is sky rocketing, and this is why we grow and preserve our food. I was diagnosed with cancer in 2020, had surgeries, then in late 2021 had chemo and radiation. I have been( prayers said and knock wood) clear on my scans. The fact that you have survived 4 times gives me hope!!!
Chicken pot pie sounds so good and yours looks so yummy to my tummy...I really like that you can use your canned veggies for soup or casserole....Thank you for sharing your pot pie and the tips to can this great meal in a jar...

I have an instant pot pressure canner that will can 4 pint jars. I love it so much because it is so convenient to pressure can just a few jars compared to the traditional pressure canner especially in the summer because I don't get a full harvest all at once to be able to get things canned up. With the electric pressure canner, I can easily get it done.
I have canned some chicken soup base (I like potatoes 🥔 in mine 😊), but never thought about making a pot pie with it. This could also be made without meat and then add a jar of whatever canned meat that you have. Thanks for sharing
I just bought a couple deep dish pie crusts. One will be for a quiche and I think I’ll do a pot pie in the other - I have a third I can use for the top

I started out pressure canning ingredients too. But now canning meats especially is such a great thing! It takes tough cuts of meat and makes them so tender!
I have canned chicken gravy in a jar many years ago from the Ball canning book and have to say it’s quite delicious..maybe you would like to try that recipe. I used fresh veggies in that recipe..I’m wondering if frozen veggies get mooshy do you know? I get what your saying about having that food security on your shelves..I started my journey 12 yrs ago and even when my three sons left the nest I continued to add more food to my shelves. It was mostly meat for the first several years which now I, so grateful I did that because Beef has doubled and tripled in price..I lucked out and was able to get corned beef for under $2.00 a lb and a couple others for $2.97lb this is will give us several meals and I can corned beef hash which is corned beef, onions and potatoes ..I have 9-hens that give us normally 8-eggs a day so breakfast is often served at lunch time when my son and husband come home for their 30 min lunch..

I use the pink Himalayan salt most often as well.
