Apologies for the delayed response. Yes, you can process tomatoes. Lots of folks make their own "V8" juice with special recipes. Just remember to pressure can the juice because onions, celery, garlic etc. are all low acid vegetables. Visit your local Extension Service website to find USDA recommended processing methods.
