@CookingwithShotgunRed I made these last night and just WOW! Freaking awesome!!! My wife, who normally won't have anything to do with blue cheese, DEVOURED hers! That's how freaking good this burger is! I caramelized red onion instead of white, and that gave it a distinct sweetly bold flavor that balanced it out well. I also added green leaf lettuce and used a grilled brioche hamburger roll. I took pics of it before eating because it was so beautiful, lol. I will make this flattened, stuffed version again many more times throughout my life; you have made me a convert and true believer, sir!
Smashing burgers before they cook is fine so long as you don’t work the meat to death like a sausage. Once it hits the heat, Steve does seem to smash a little too much though. One smash to make contact with the heat is good. When they’re this thin, it’s hard to make them super tough in any way though!
I agree with Steve. Burgers larger than 2 inches thick are too much of a nusiance to eat. A local grocer sometimes has pre-formed 1/4 lb patties. They are about 1/2 thick. Once cooked they fit perfect on a cheap burger bun. As long as you are not making a deluxe burger, they come out very well. Just add cheese, onions, pickles, condiments of your choosing. Don't try and make a double burger. Be way to thick.
REAL TALK, I've been preaching about the stupidity of visually tall burgers. THIS AIN'T A SHOW... its a taste and food experience! If I need to mash and stretch that much, you made it wrong! I love blue cheese burgers. I chop up onions and garlic extra small and add it to the meat and splash it with worcestershire sauce. Its so good.
