How to Butcher a Deer Hind Quarter * EVERY CUT EXPLAINED *

  • I harvested a whitetail deer in Florida and it's time to process the meat! I recommend dry aging meat if possible, but with temps in the 80's, I had no choice but to jump right into processing. In this video I show you step by step how I butcher an entire hind quarter of a deer at home. I talk through each cut of meat and explain how I like to use each cut when cooking.

    My wife was my best hunting buddy and my daughter was 9 when she past away but my daughter is now 20 and all the time I spent with her hunting and fishing has paid off . She is a very dedicated hunter and I would like to teach her and myself how to properly breakdown a deer with the correct cuts . Thank You AWESOME VIDEOS

    These folks are right. I’ve been butchering deer since I was a teenager and I’m almost 80 now. I might have watched a hundred or more videos explaining the process and yours is, by far, one of the very best at simplifying and explaining the reasoning behind each cut. You’re one of the few who detail the how and why of locating and removing that gland between the rounds in the hindquarter. Excellent - no, superb job. Thank you.

    Allie, you are truly a surgeon, thank you so much for this video otherwise I would have never known about that gland in the hindquarters. Many years my family has butchered their deer, and just sawed away and hindquarters for steaks no wonder it tasted like crap, thank you again so much much appreciated I'm doing mine right now

    What I like about your butchering videos is that you make it doable for amateurs, and you explain not just the cuts, but which are best for cooking different ways. I particularly appreciated seeing how you cut out the glands and provide the explanation about why, and how your knife could spread the distasteful gland material. And… you just make me smile!

    Finally! I have been butchering venison like this for 4 decades, you cannot remove all the silver skin. Connective tissue ect... unless you do it the right way as this young ladie has in this video. Venison has a wonderful flavor if you dont marinade in milk, vinegar. And a whole host of flavor cover-ups, this to excuse a poor butcher job.

    I really enjoy this anatomical breakdown of the process. You pay attention to detail and you take time to explain every step of the process well.     I just found your channel and love the time that you take to explain in detail everything you are doing. I really like the "Bearded Butchers" but a lot of the time, they go so fast that you don't get the detail necessary to do it yourself. I process a couple of deer every year and don't have any problems but your detail really helps. Great Job!

    I have cut up well over a couple hundred deer in my lifetime. You did a wonderful job of explaining each cut to those who don’t know the difference and are very handy with a knife. Got me excited for my hunt in NW South Dakota in a month. We have 14 tags to fill and I am always the head butcher so will be eating good

I just took the top and bottom round and sliced the most amazing looking jerky I have ever done on my jerky board. My 9yr old daughter an I are passionate about venison and she thanks you as well.     Once again, Allie, I have to thank you. I continue to watch your videos often so I am improving on processing our deer. I recently purchased a new knife very reasonably on Amazon, along with a pair of cut proof gloves which have greatly increased my confidence when using my new knife.🤣 I have just gotten an electric canner and will begin using it this week! So excited about all we can do now to store our venison long-term. I have to say braised shanks are hands down my favorite meal so far. Praying for you and your family. You are such a blessing.     Eye of rounds get turned into minute steaks by tenderizing and then breaded like a cutlet and put with gravy. They are one of my favorite cuts.

    Liked, subscribed, and shared. I read a few comments and I agree with everyone. Absolutely, hands down, the best breakdown of a deer hind quarter. Professional butchers and meat cutters should take notes from you on how to do an instructional video. I have cut my hind quarters just as you have done but it's difficult to explain to people who ask . Your video is better than any explanation I could ever say and better than any other video out there. Wow, and I have been wanting to see how a chamber vac sealer does from just a regular person.     You are awesome! This was actually my sixth deer. First in AZ, Coues deer small also. I’m usually the trimmer and packager. But this year I was first to bag mine so I was left with these hind quarters to butcher. It was a snap. I don’t think my Husband ever knew about that glad so yah great to learn. Thank you! Now hopefully he gives me the call soon to come and assist on bringing another home.

    I have no idea how many deer I have butchered in my day but it is a lot. I have also taught young hunters how to do it and I take a lot of pride in it but when teaching inevitably they ask what type of meat is that. Pride kind of slips away when all I can answer is, “Steak, grind, stew or roast.” Amazing job showing and explaining not only how but what each cut is and how to best use it! Had I known what the eye of round was on a deer I wouldn’t have been so disappointed in it all these years! Thank you for teaching this old dog a new trick or two!       @@OutdoorsAllie for sure 😊. We moved to the property we are on all the from Hawaii to be closer to family and start our homestead. I began beekeeping, deer hunting, got my first wild turkey. Working towards a stronger sense of food insecurity and self sufficiency, but grew up hunting small game. I am hooked for sure and love the taste of venison when properly cooked. Plan to make a whiskey butter and bourben venison heart recipe this weekend!

    I’m an addict for butcher videos but no one has explained in detail where every cut lies on the hind quarter. Instead that all flip the quarter every which way during the butcher process and I spend more time reviewing which way they are looking at the meat vice how they are cutting it so I can follow along.
    Loved the video and your personality. So thank you for the instructional, it’s exactly what I needed. Time to watch the rest of your videos!

    Excellent video Allie! I'm fortunate that my wife hunts with me and is right next to me when it's time to process our game. This year we handled the entire job from start to finish all by ourselves, to include grinding the trim. Doing all this together really helps us to appreciate the blessing of being able to hunt and harvest meat for ourselves and it's so much healthier than store bought meat. We have been participating in the process for awhile, but are now starting to remember the actual cuts as we go through the process on our own. If I could offer one small piece of advice it would be to caution your followers to be extremely careful if they chose to purchase and use one of those havalon piranta knives you used to break your deer down since they are effectively a scalpel on steroids. We use them as well, but it never fails that one of us gets over confident and nicks ourselves 🙂.

    I have watched a bunch of these videos over the years even though st this point I have it down. Just interests me. I just wanted to say this is the best one I've ever seen and the one I will refer people too moving forward. Great job on this.

    One tip that helps me out is using what i call a "dirty" knife alongside my nice sharp boning knife. I actually use this same method when im skinning a deer. I use the "dirty" knife for the dirty work. Cutting around bones, kneecaps, or cutting through hair when ringing the deer during skinning or cutting off the legs and head. It allows me to always have a sharp knife on the side for doing intricate cuts while butchering or skinning an entire animal without the need for resharpening my good "clean" knife. For my dirty knife i literally just use an old stiff 4" rapala knife which has a broken off tip lol. But i love this method. When i need to get down and dirty or do some prying in certain areas or digging into bones i use that knife.

    I’ve only gone hunting once when I was 13 and didn’t harvest, but as I’m getting in my early 40’s the desire is popping up again. This and your last video are really helping give me the confidence to give if a try. I wish I had someone to go with though. Need a battle buddy, lol.. great videos and you’re truly an inspiration.     Process a dozen animals a year. Living in Montana keeps my freezers full. Must leave a note and compliment you on your instructional videos, they are suited for all hunters to see and appreciate

    Hello Outdoor Allie, I’m older than “Karl” (in one of the comments lol) its my first year hunting and have harvested a few this year (has been the best experience and don’t know why it took so long for me to start hunting) I paid for processing the first one-expensive- watched another video and did what I thought was ok on the deer until I saw yours and I showed my 70 yr old neighbor how you do (did) it and he was amazed. Know that You have helped some older guys butcher their deer the right way bc of the time you took out of your life to help someone; so thank you & God Bless.

    I always like watching others process their venison. I always learn a trick or two. Great video and perfect speed. Many others go too fast or slow, or skip the harder parts to make themselves look better. You did great and much the same as I process mine. Love doing Osso Buco with the shank

      Everybody goes so fast because they think that's whatever body wants that's what the RUclips algorithm is telling them are that's what all the big channels that are about building RUclips channels is saying at 8 to 10 minute video or keep your people interested people interested I like the longer videos I don't think it's a big deal yes I mean there's just A lot of crap like some of these videos my gosh my kid I catch him watching them and I mean do This is so stupid Talk about 1718 year old kids do and stuff that 8 9 year old kid would do

      I am going to make biltong and pemmican. Biltong with salt pepper vinegar and coriander. South African charcuterie jerky , more cured than dried see. 2 guys and a cooler. Pemmican will be the majority of it because it can be stored without refrigeration for like 20 years. Venison beef tallow and dried berries . Some good videos on pemmican on you tube, making and storing pemmican with Donald porta. Not plugging just in case u were interested

    Thanks Allie. I only found your channel after I had finished "processing" the front half of the deer...resulting in some very unusual cuts. However I found yours by the time it came to the hind quarter.....and things have improved significantly. It might be my first deer, but it won't be my last.

    Excellent video. It helps when you start with a super clean quarter like this. It takes almost as much time to get it cleaned up like that as it does to break it down. Shanks are great if you slow cook them in a crock pot for about 6 hours.
