All My Best Chocolate Ganache Tips

- All ratios are written with the first number as the weight of chocolate and the second number as the weight of cream.
For example:
1:1 Dark Chocolate Ganache:
227g (1 c) heavy cream
227g (8oz) dark chocolate, chopped
1. Heat the heavy cream over medium heat until it comes to just below a boil.
2. Add the hot cream to the dark chocolate and let sit for two minutes.
3. Use a rubber spatula to stir everything together. Start by slowly mixing in the center and work your way out.

to anyone asking: he said " milk and white chocolate ganache needs more chocolate, so the first number(1,5 and 2)are refer to the chocolate, always! So, in milk chocolate 1,5(chocolate):1(cream).So like 150g chocolate and 100g cream. Or 1,5 cup chocolate and 1 cup cream.

I’ve always been interested in making ganache for cake and while i had a surface level understanding I’m happy for this video so I can better get ratios, had no clue it varied but chocolate type but that make so much sense!
Spreading, piping, and whipping. My favorite activities
Chocolate-Cream ratios:
Dark Chocolate:
1:1 for spreading
2:1 for piping
1:2 for whipping
White:
2:1 for spreading,
3:1 for piping
1:1 for whipping
So memorize the dark ratios and then remember that white adds one part of chocolate to each.

thanks for writing this the video was too fast for me as a beginner and I'm still confused :/ I get 1:1 means equal amount but 2:1? 2:1? 3:1? which one is the 1 and which one is ×2 or ×3 ? the chocolate or the milk?

Should have watched this video before making mine earlier this week. It was way too hard to either decorate or fill the cupcakes with it. Probably I used to much chocolate and too less cream (even though I followed the recipe...) maybe I should give it another shot with your tips!
You can always soften it by reheating it slowly in your microwave or over a double boiler. Ganache will harden over time so be sure to reheat it if that happens to soften it back up.
