I struggle with white stitches on pk until I found you can change the setting to "use translucent colors" which allows you to still see the symbols underneath your completed stitches.
PK tip for the disappearing white stitches - if you hit the gear icon when you have the pattern open and change the theme from Light to Dark, it'll make the background/unstitched stitches a dark grey. 3799 then disappears, but you can switch it back when you're done with the white area.

Alternatively can use the use translucent colours setting - this lets you see the symbols through the completed stitches
