  • Brazilian Truffles (Brigadeiros) 4 Ways
    Serves 8-10 (per recipe)
    Classic Brigadeiro
    INGREDIENTS
    1 tablespoon butter
    14 ounces sweetened condensed milk
    ¼ cup cocoa powder
    Chocolate sprinkles
    PREPARATION
    1. In a pot over low heat, melt the butter, condensed milk, and cocoa powder, stirring continuously until you can see the bottom of the pot for 2-3 seconds when dragging a spatula through.
    2. Pour onto a greased plate, then chill for 1 hour.
    3. Shape and roll the chilled mixture into balls.
    4. Roll the balls in chocolate sprinkles.
    5. Serve!
    Coconut Brigadeiro
    INGREDIENTS
    1 tablespoon butter
    14 ounces sweetened condensed milk
    ½ cup coconut milk
    Coconut flakes
    PREPARATION
    1. In a pot over low heat, melt the butter, condensed milk, and coconut milk, stirring continuously until you can see the bottom of the pot for 2-3 seconds when dragging a spatula through.
    2. Pour onto a greased plate, then chill for 1 hour.
    3. Shape and roll the chilled mixture into balls.
    4. Roll the balls in coconut flakes.
    5. Serve!
    Strawberry Brigadeiro
    INGREDIENTS
    1 cup fresh strawberries, chopped
    ½ cup water
    1 tablespoon butter
    14 ounces sweetened condensed milk
    ¼ cup white chocolate
    Sprinkles
    PREPARATION
    1. In a pot over medium-high heat, reduce strawberries and water until there is a jam-like consistency and much of the liquid is evaporated.
    2. Reduce the heat to low, add butter, condensed milk, and white chocolate, stirring continuously until you can see the bottom of the pot for 2-3 seconds when dragging a spatula through.
    3. Pour onto a greased plate, then chill for 1 hour.
    4. Shape and roll the chilled mixture into balls.
    5. Roll the balls in sprinkles.
    6. Serve!
    Cookies & Cream Brigadeiro
    INGREDIENTS
    10 chocolate cream cookies
    1 tablespoon butter
    14 ounces sweetened condensed milk
    PREPARATION
    1. Separate the cream center from the chocolate cookies, and set aside. Crush the chocolate cookies and set aside.
    2. In a pot over low heat, melt the butter, condensed milk, and cream centers, stirring continuously until you can see the bottom of the pot for 2-3 seconds when dragging a spatula through.
    3. Pour onto a greased plate, then chill for 1 hour.
    4. Shape and roll the chilled mixture into balls.
    5. Roll the balls in the crushed chocolate cookies.
    6. Serve!

    Hey Tasty! These recipes sound great! Thanks for sharing some traditional Brazilian desserts with the world. - Although you got the name wrong, but I'm guessing it was a typo. Anyway tips for those of you who are not Brazilian and want to try this, based on a few questions I saw in the comments:
    - When the video shows them scraping the bottom of the pan, that's them showing that it will be ready when it no longer sticks to the pan.
    - If you are afraid it will get to sweet just add a little milk before you start cooking. It has always worked for me.
    - So it doesn't stick to your hands you could put some oil or butter on them
    - Or you could skip the rolling altogether and just eat it with a spoon
    - If it's hard to roll, try resting it for about 15 minutes
    - Also make sure the ingredients are well mixed and there aren't any lumps and mix through all the cooking time so you won't get different textures in it. Some people said it got kind of hard and weird, and from what I've experienced that is mostly caused by not mixing it too well.
    For those who want to know what it tastes like all I have to say is: they are delicious, with a sort of soft caramel texture almost. They are one of my favorite desserts right after fudge brownies. There are some people who say they are too sweet, but we love them just the way they are. A standard in any Brazilian birthday.

      Oh I didn't say that, but you could also make this in the microwave if you want the eat with a spoon type: just add the ingredients in a microwave safe container like a mug or so and slowly heat them, mixing every 10 to 30 seconds, until everything is well combined and it has stiffened a little. It would take some testing to see it get to the texture you like especially because microwaves vary a lot, but on mine it usually takes about 2 minutes - I like it kind of runny when I'm eating with the spoon though.

      Because brigadiero sounds spanish and we brazilians hate when people think we speak spanish when actually our language is portuguese. The similarity between spanish and portuguese is like english to german.

    following tips from someone who tried and failed at attempt number 1 but did great at attempt number 2:
    • use a non stick saucepan!!!
    - if not available, butter the pan first before pouring the condensed milk
    • put the heat on low and stir throughout with just the low heat setting
    - never ever switch or change the heat setting
    • (optional) roll the chocolate mixture in crushed grahams instead of sprinkles😃
    • (optional) use milo or chocolate powder drink rather than unsweetened cocoa powder for a more chocolatey and emulsified flavor
    • (optional) instead of lining a container with parchment paper/plastic, just butter the container and pour the chocolate mixture!

      in brazil we dont use the cocoa powder, we use "achocolatado" (idk how to translate but i'll just say chocolate powder), some people use pieces of chocolate bar, but in the most of the times we use the chocolate powder. the coconut brigadeiro is called "beijinho", that means literally "little kiss". the strawberry one we don't use raw strawberry, we use a kind of "strawberry flavored powder" to mix with the milk (the brand is called Nesquik), and we call it "bicho de pé", or "feet bug".

      in brazil we dont use the cocoa powder, we actually use chocolate powder. brazilians have a really sweet taste and i think it's so much better than using the cocoa

    For people thinking about making this: it's the sweet equivalent to mac 'n' cheese = if you can't do it, you can't do anything
    About the recepies, only two of them are brigadeiros: the first one and the last one (the last one would be considered a "Gourmet" flavour).
    The coconut one is "beijinho" - instead of coconut milk we tend to use grated coconut (it also tends to be sweetened).
    The strawberry one is "bicho-de-pé" - we rarely (read 'never') have time for the actual fruit on water thing, just use the classic recipe and change chocolate for a strawberry-flavoured drink mix (like Nesquik) and you're good to go.

    NOT BRIGADIEROS! BRIGADEIRO!!!!!!!!
    and you gotta specify - cocoa powder usually comes without sugar, this will make your brigadeiro taste HORRIBLE, we brazilians usually add cacao powder, the one that comes with sugar...
    The second one, coconut, we actually call it BEIJINHO, and it isn't done like that! Instead of coconut milk, we use coconut flakes in smaller pieces (buy grinded or blend it / process it).
    And last but not least: our strawberry version is called BICHO DE PÉ, and we usually do with flavoured gelatine powder (strawberry flavoured) or Nesquick (strawberry flavoured).
    Nice tip - before rolling it, add some butter to your hands, so it won't stick.
    I'm a bit frustrated with you guys, now whenever I watch a recipe from another place in the world I'll know it's ins't faithful :(

      Cacao powder, in English, basically means the exact same thing as cocoa powder. Chocolate powder or hot chocolate powder is sweetened.
      Ofc, you could just add a mixture of cocoa powder and icing sugar.

      OVO chantal So, for one can of condensed milk, and one table spoon of butter, you'll need a 100 to 150 g of coconut flakes, according to your taste (if you like coconut a lot, put more). Convert grams to lb, if in the U.S. Don't forget to blend it or process it before, it'll taste better... (in Brazil we buy a package of it, already grinded)
      About sweetness: it depends on your taste! my husband is German and he hates it, because condensed milk is very very sweet!!!
      but if you never tried it, you should, and then you'll know...
      another thing about BEIJINHO (the coconut one), we usually decorate it with a carnation (check on google for pics) :)
      ANY OF THOSE... we should always do it in middle heat. some people do it in high heat, but that's only advisable after knowing what you doing, because it burns VERY EASILY.

      theMoporter Oh, ok...my bad. So, sweetened chocolate powder! But I wouldn't advice doing with cacao, and adding sugar, because it can backfire big time if you're not a chef and know a lot about amounts.
      In Brazil some people buy a fancy chocolate for cooking, but some just use those chocolate mixes to mix with milk, and drink a cacao, you know?...

    In the classic brigadeiro, we use a chocolate called "Nescau". Its a mixture that we drink with milk, and is good If you use in brigadeiro.

    Instead of coco powder, use melted chocolate. Amazing taste! Oh and I like them after I chilled them in the fridge ;)

    A tip to make an even more delicious Oreo Brigadeiro:
    1. Trow away the white cream inside, it's pure fat
    2. Smash the black side of the Oreo and mix it in the fire with the condensed milk. Thus, instead of using cocoa powder you use it the cookie part of the Oreo.
    We also make something called ''palha italiana'', it's amazing.
    Another tip: You can put milk cream and mix with the other ingredients, it makes the brigadeiro more delicious, with better texture and it makes a better portion.
    An observation from a Brazilian: Most of the time we are lazy and don't want to roll them, because it takes time and is a little messy, so we just eat it from a pot. We also often put brigadeiro in everything, cake, ice cream, tapioca, crepe, pizza, pastel, etc. In the cake, to make it have more moisture, we cut it in half and put in them brigadeiro but more liquid(much less time on fire), more like water than something solid.
    Hope you guys like brigadeiro, it's my favorite desert of all time. And check out other Brazilian recipes, we have a lot of delicious stuff, like pastel, coxinha, enroladinho de salsicha.

    There is a easy side guys! The one we use more!
    You can use just condensed milk,chocolate for putting in the milk and butter, and just heat a little less and eat with a spoon
    This type is to fancy for us Brazilians 😂kkkkkkkk

    Wonderful! Place half a can of “Media Creme Table Cream” and you will see what a wonderful texture! Outside it decreases some of the sugar. It is perfect! (Tip from a professional in Brazilian brigadeiros).😊😘

    Sinceramente isso Não é brigadeiro. A penas o primeiro pode até ser chamado de brigadeiro.
    Mas eu que sou brasileiro não reconheci os demais, pós leite condensado com qualquer coisa não é brigadeiro. Eu quero dizer que outros doces como beijinho, que tem aparência semelhante au brigadeiro Não são brigadeiro. Não quero dizer que eles são ruins são muito boms. OK ,
