Looks like a 20+ pound Flathead grabbed it 3/4 way up and skinned and gutted it all in one big bite! Turtles cut off triangle chunks by ripping bites loose with their claws. The rough "teeth" damage on the skin is the giveaway.
Do you have big gar in that creek? It's possible they will eat your fish also. I've seen some in a creek in Florida that were 5 an 6ft long. Like the video. Good luck on the next one. From Georgia
Would you mind explaining your tank set up? Eventually I'd love to be doing the same thing. How often do you have to drain and refill? Is it well water? If its from the tap do you need to dechlorinate it or treat it to make it liveable for the fish? I enjoy the videos!
It's an old milk tank I came across. Holds around 350 gal. I have clean well water trickling in and the dirty water trickling out 2 drain holes toward the top. Clean water has to be going in or the water will get nasty from the fish emptying their stomachs, and they will die even if you have an aerator running.
Another vote for a turtle attack. I think if it would have been a big ol cat it would have just swallowed it whole. Good that you could salvage most of that fish.
I was waiting to see on your skinning video if you were going to stop at the tail and flip over the filet like you just did but in the how to skin video you cut it through at the tail instead of leaving it attached and flipping it over
