    Joy Ride Coffee method - but you do it well.
    Being cheaky - forgive me - Except you were a little heavy handed with the shaping and degassed the dough too much and paid for that with a denser crumb. JRC is very light handed for that part.
    still a great loaf.

      Thanks for your subscription and for your comment. At work usually I like to use ice cube to steam. At home I don’t have the equipment…

    what you tell is not true... high in protein means high in gluten...

      usually yes but there are exceptions
