I tried shawarma with ketchup before. It is literally the same issue with pineapple on pizza: the sweetness is simply too tangy to the point it practically takes kills most if not the rest of the flavour. In short, it really does not work.
But Pineapple on Pizza works if you do it right ;) Pair it with something salty like Ham and boom perfect flavour combo (also dont put Raw or sugared Pineapple on it.. Grill that shit before its 100000x better with some caramelization). Cant do that with Shawarma though because the customization options are limited and Ketchup doesnt play well with either Garlic Sauce, Chipotle Sauce or Pomegrenade Molasses. I sacrificed one Shawarma and put ketchup on it and its just not a good fit. Even the Chicken/Beef on its own with Ketchup tastes bad because of the Spices used :P
