Its actually because a single violin note usually contains a wide range of frequencies. The wider the frequency range, the more powetful the sound is going to sound. This is also why a saw synth for example sounds more powerful than a basic sinwave. Additionally, violins can 'swell' so a sustained note can increase and decrease in velocity, whereas a piano for example is stuck playing at the velocity created by the initial hits, if that makes sense.
