Large Family Food: Homemade Bread from Freshly Ground Wheat & Spelt

  • My husband and 7 children love this bread! In this video, I'm making homemade, whole grain bread from freshly ground wheat and spelt! Freshly milled grains are easily obtained by using a grain mill. I've had my NutriMill since 2009 and it's still going strong! All of my whole grains and the honey used in this recipe were purchased through Azure Standard. Recipe below!

    Wheat/Spelt Bread (makes 4 loaves)
    Grind approximately 4 cups of whole grain spelt and 4 cups of whole grain hard red wheat.
    To a KitchenAid mixing bowl, add 7 cups of the freshly milled spelt flour and 7 cups of the freshly milled hard red wheat flour. Then, add 1 rounded Tbsp. of sea salt and 1-1/2 rounded Tbsp. of dry yeast. Mix thoroughly. Add 1/2 cup olive oil and 2/3 cup honey. Finally, add 4 cups of hot water to all other ingredients. Briefly mix everything together, just enough to slightly incorporate all the ingredients together.
    Place mixing bowl in KitchenAid mixer and knead for 10 minutes with dough hook. While the mixer is running, butter 4 loaf pans.
    Remove mixing bowl from the KitchenAid and butter the countertop where dough will be formed into loaves. Divide the dough into four equal sections and form them into loaves. Place in greased pans.
    Place pans in an unheated oven (with oven light on) and let dough rise for 30 minutes. After 30 minutes have passed, turn oven on to 350 degrees and set timer for 35 minutes. The bread will bake as the oven preheats and comes to temperature. Once golden brown, remove from oven and turn out of pans onto cooling racks. Once completely cooled, loaves can be frozen and then thawed out later as you need them. Enjoy!

      I know it seems like such a simple thing, but I felt like Einstein when I figured out to do the oil FIRST and THEN the honey. :)

    I have had my kitchen aid for about 8years, I was very fortunate to get mine free through points on my credit card,(also earned one for my daughter -in-law. I use to use bread makers but everyone prefers the kitchen aid bread. I use half wholemeal and half plain and now just know my mixture without fussy measuring.

    Wow, your honey after oil hack is so immensely sharp! I love it!! Making life so much easier and wasting less. I also scrape everything out very carefully. Not only out of frugality but it's so much easier on the kitchensink. Also so smart to let your bread rise in the oven that's preheating. Janice you should write a book with all your tips and tricks on how to make kitchen life easier. I also saw you putting used utensils in a jar. That is also so very smart. Saves a lot of dishes and above all: always clean countertops! I'm sure you have lots more of these smart hacks. Tips and tricks on getting your children involved in cooking, etc You are sitting on a gold mine!

    My only question is how in the world your family of nine can eat off of only one loaf at a time? Each time I make homemade bread my family of TWO can wipe out the loaf in one sitting, lol! Love your family and your videos and while I'm a city dweller I still find them interesting. I grew up on a homestead so maybe they just bring back memories of happy times.       I will put that one on the list, Christina! Actually, we just learned how to make homemade cream cheese at the cheesemaking class Sarah and I attended recently. (The one we were driving home from when I crashed into the deer.) So, that's a new skill for me. We're getting a lot of cream right now from Daisy the cow, so we need to plan in time to make cream cheese. :)

    I have watched others making bread and it didn't inspire me to try making it myself. You did though. You made it look fun. I've never made my own bread and I think I might give it a try. I think it was the slamming it on the counter thing that got me. It looked like a stress reliever.

    Thank you for making this. My Dad loves bread (I'm super picky... my "favorite" store bought bread is the Pepperidge Farm Multi-grain bread), and I want to learn how to make some. I try to make a new recipe every so often, but I hate to cook. We both have health issues, so I know I need to get over that mentality. I hope to try this one day, it doesn't seem too difficult.       Thanks for commenting, Shayna!! I really do like this recipe. Some other recipes I've used called for specialty ingredients like soy lecithin or additional gluten. My preference is plain ingredients, so this one really jumped out at me. If you do try it, please let me know how it turned out! :)

    I am a granny that is trying to get better at baking bread !!!! 🤦‍♀️ I can cook a 8 course meal from scratch no problem. Bread sometimes it turns out sometimes it doesn’t !! Is there a reason you didn’t bloom your yeast ? Does that just depend on the type of flour or just the recipe? Thanks in advance for letting me pick your brain !!! 😁 God bless !!

      Hi Melissa Lee!! You know, I never thought about blooming my yeast! I do that with my French Bread recipe, but not this one. I use the same type of yeast in both recipes too - active dry yeast.     I actually requested a video today on this not knowing you already had one as I didnt realize there was more videos on my binge watching of your family. You are such a great teacher how you explain how to do stuff. I just started making homemade bread a year ago. I think you perfectly explained how to kneed the bread with the air pockets and your steering wheel technique. I would love to see how you made the french bread and to be honest all of the breads you make. Again, I can almost smell this video. I also never knew how to turn the grains into flour until i watched this. I think you have inspired me to order the whole grains. A link to your flour mill would be awesome if you could find one.

      Hi Katie! Oh, how I wish you could smell the bread while watching the video! I haven't made a video on my French bread yet, but I do intend to at some point.     Have you ever made new potatoes and peas with cream sauce? My gram and my mom used to make it when I was a child. I've never made it before. If you know how, can you make it?

    i have the same grain mill and have found that a small (about 2 inch) brush works well to get the loose flour off the lid and the cup. Also, I have heard good and bad about the wheat berries from Azure Standard. Have you had any issues with the cleanliness of the wheat berries from Azure? Thanks

    I do not know much about bread making nor have I heard of spelt. What is the purpose of using both grains? Is it only for the flavor of the bread, or do the 2 grains combined just make for a tastier bread?

      Oh Leah, you ask hard questions!! All it says on there is KitchenAid Heavy Duty. I don't know...is there a Heavy Duty version that's tougher than a standard KitchenAid? I don't know! :)
